RIBS****Korean Beef Ribs

- 4 pieces Korean-cut ribs (from Tarini's) about 1 1/2 lbs.
- 1/4 - 1/3 cup Bulgogi Marinade (Sempio from Dumas')
- 3 - 4 scallions, thinly sliced on the diagonal
- 1 small carrot, thinly sliced on the diagonal (discarded before eating)
- 2 - 3 cloves garlic thinly sliced (optional - I tasted the marinade and it was pretty garlicky already)
- 2 teaspoons toasted sesame seeds, to garnish

- 4 servings
- 1 tablespoon olive oil
- 2 onions, peeled and chopped
- 4 cloves garlic, peeled and minced
- 1 28 ounce can San Marzano tomatoes
- 2 cups chicken broth
- 1 tablespoon dried oregano
- 2 carrots, peeled and grated
- 8 oz. turkey Pepperettes, thinly sliced
- Sprinkled sea salt and freshly ground black pepper, to taste
- 4 slices bread
- 1 cup grated Mozzarella cheese or Pizza blend
GAZPACHO*****(Tichi's Gazpacho) - 5 Points

Makes a great work lunch
- 2 lbs. tomatoes, quartered
- 1/2 lb. cucumber, peeled if necessary
- 3 ounces sweet red pepper
- 1 clove garlic
- 2 tbsp. sherry or balsamic vinegar, or more to taste (sherry preferred)
- 1/2 cup water
- 1/4 cup extra-virgin olive oil, preferably Spanish
- salt to taste
- For the garnish - OPTIONAL - This is nice but not necessary - I like it just with a good handful of tiny olive oil croutons
- 3 tbsp. EVOO
- 1 slice of rustic white bread, diced finely
- 12 cherry tomatoes, halved
- 1 cucumber, peeled and cut into 1/2" cubes
- 1 tbsp sherry vinegar
LAMB-Lamb Chops with Rosemary-Mustard Crust

* In a small bowl, combine mustard and garlic
- 1 serving
- 1 tbsp. Dijon mustard
- 1 teaspoon minced garlic
- 2 tbsp. Panko
- 1/2 tablespoon finely grated Parmigiano
- 1 teaspoon minced fresh rosemary
- 1/4 teaspoon dried Italian herbs
- 2 lamb chops (3 to 4 ounces each)
- Coarse salt and ground pepper
- 1/2 tablespoon EVOO
SALMON****Poached Salmon With Dill Horseradish Sauce

Very good for both. Dan even liked the sauce (and didn't ask for Tartar) so it's worth a re-do
- Poached Salmon:*
- 1 cup white wine
- 1 cup chicken or vegetable stock (or water)
- 1 onion, coarsely chopped
- 1/2 small bunch dill
- 3 sage leaves
- 2 bay leaves
- 1 lemon, quartered
- salt and cracked black pepper
- 12 oz. salmon filets or steak (half for this recipe, half for another)
- Dill Horseradish Sauce:*
- 1 tablespoon finely chopped dill
- 1 tablespoon prepared horseradish
- 1 tablespoon lemon juice
- 2 tbsp. greek yogurt
- 2 tbsp. mayonnaise
- salt and cracked black pepper
- Sliced chives, to garnish, if available

- 1 tbsp almond butter
- 2 tbsp protein powder
- 1 tsp unsweetened cocoa powder
- 1 tbsp flaxseed oil
- 1/2 banana
- 1 cup unsweetened vanilla almond milk
- 2 dates
- 1/2 cup ice
VEG - Roasted Red Pepper, Goat Cheese, and Fresh Mint Wraps

Spread wrap with softened goat cheese and top with remaining ingredients
- 1 large whole wheat wrap
- 2 tablespoons spreadable goat cheese, softened slightly
- 1/2 cup spinach arugula blend
- 1 tablespoon chopped fresh mint
- 1 roasted red pepper half, sliced into strips and blotted dry
- salt and pepper to taste
CAULIFLOWER****Roasted Cauliflower - 4 Points

- 1 squeeze fresh lemon juice, plus grated rind if desired

- 2 tbsp. flour
- 1 tbsp. evoo
- 2 cloves garlic, minced
- 2 tbsp. white wine
- 1/2 cup chicken broth
- 1/2 lemon, zested and juiced
- 2 tbsp. capers

- 2 ounces of pancetta, spicy or regular, diced or thinly sliced
- 1 shallot, thinly sliced
- 1 clove garlic, thinly sliced
- 1 pinch hot pepper flakes
- 2 tbsp. Tomato Paste
- 2 tbsp. Vodka
- 2 tbsp. Heavy Cream
- 1 pinch freshly grated nutmeg
- 2 tablespoons chopped fresh parsley, OPTIONAL
- 3 1/2 oz. Catelli Smart Penne
- Parmigiano Reggiano, to serve
