QUESADILLA - Chicken & Jalapeno Quesadilla with Lime Yogurt Sauce

Saute sliced jalapeno in the olive oil until tender and golden
- 2 small whole wheat tortillas
- 1 teaspoon EVOO
- 1 jalapeno, seeded or not, cut into rings
- 1 1/2 ounces shredded chicken
- 1 green onion, thinly sliced
- 2 tablespoons fresh cilantro, if on hand
- 60 grams Kraft Tex Mex Light Blend
- 1/4 cup Greek yogurt
- zest and juice of 1 lime
- generous pinch Maldon salt
POTATOES****Roasted Potatoes (Actifry)

19/12/16 - Great for both (not quite as good as the fries but a very close second) 3 servings, can be doubled
- 500 grams potatoes, scrubbed and cut into 2" chunks (yellow-fleshed)
- or same quantity of mixed Little Gems, halved
- 1-2 tablespoons goose or duck fat
- sea salt to taste
- optional head of garlic, cloves peeled and left whole

- Garnishes:
- (Makes 6-8 servings)
- 1 turkey carcass, broken down into several large pieces (including wing tips and drumsticks if possible) I used thighs and wings from the grocery story which I roasted first in the oven.
- 1 (900 mL) container chicken broth
- 1 1/2 cups long grain rice, rinsed and drained (I used white basmati)
- 1 (1-inch) piece ginger, peeled
- 3/4 tsp each salt and white pepper
- 4 to 6 cups hand-torn or cut pieces of cooked leftover turkey (again, I used the meat from the thighs and wings)
- Ground white or black pepper
- Sesame oil
- Sliced green onions
- Fresh cilantro
- Sliced fresh chili peppers
- Soy sauce
- Chinese vinegar
- Pickled Chinese vegetables
- Roasted salted peanuts

- streusel:
- 1/2 cup rolled oats
- 1/2 cup all purpose flour
- 1/4 cup Splenda Brown or 1/3 cup light brown sugar
- 1/4 teaspoon cinnamon
- 6 tablespoons cold unsalted butter, cut into tiny cubes
- filling:
- 4 apples, cored and thinly sliced
- 2 tablespoons Splenda Brown or 1/4 cup light brown sugar
- 1/2 teaspoon cinnamon
- 1/4 teaspoon cardamom
AVOCADO*****Tomato-Avocado Salad (Cooking Light)

- 2 tbsp. buttermilk
- 1 1/2 tablespoons Hellmann's light mayo
- 1 tablespoon minced fresh flat-leaf parsley (I didn't have any and sprinkled my salad with fresh basil chiffonade. Some dill would work in the dressing too)
- 1 tablespoon minced shallots or chives
- 1/2 teaspoon minced fresh thyme
- 1/2 teaspoon cider vinegar
- freshly ground black pepper and salt to taste
- 1 garlic clove, minced
- 1/2 cup frozen corn, thawed)
- 1 yellow or orange tomato, cut into wedges (this is pretty but if you don't have coloured tomatoes, just use additional cherry tomatoes)
- 12 cherry tomatoes, halved
- 1/2 diced peeled ripe avocado
- few slices grilled red onion (didn't have this the first time and didn't miss it)
BREAD****Tuscan Bread Salad - Mediterranean Fresh

- 55 grams bread of choice, cubed and toasted
- 8 cherry tomatoes, halved
- 1 pickling size cucumber, diced or sliced, or equivalent amount of zucchini
- 1 tbsp. minced red onion or shallot
- 1 tbsp. fresh basil chiffonade
- 1 tbsp. chopped fresh parsley
- 1 ounce mozzarella or feta or Haloumi, diced
- 2 Tbsp. basic Red Wine Vinaigrette
FRITTATA****Rapini Frittata

22/04/15-Nice and easy if you've got leftover roasted rapini
- 2 eggs
- 1 serving leftover roasted rapini with chilies and garlic
- 1 teaspoon olive oil, if needed (it wasn't)
- 100 calories or less of cheese of choice - fresh mozzarella, provolone, Kraft Italiano Four-Cheese Blend, goat cheese, parmesan or pecorino, etc.
- Squeeze of fresh lemon juice - I didn't try this, but I think I'd like it, although after the frittata comes out of the oven, to serve

- 8 servings
- 3 dried Chinese mushrooms, left whole
- 1 cup hot water
- 1 cup dark soy sauce
- 3 tbsp. splenda brown
- 1/4 cup Chinese rice wine
- 2 tsp. sesame oil
- 1 whole star anise, crushed
- 3 - 4 cloves whole garlic, lightly crushed (my addition)
- 3 cloves black garlic, peeled (because I happened to have it)
- 2 - 3 shallots, peeled and halved
- 1 tsp. sechuan peppercorns, lightly crushed
- 1 1/2 " fresh ginger, grated
- 1 - 3 lb. whole chicken
- 2 green onions, finely sliced (which I forgot at the end)

To make the soup, heat butter over medium in a large stockpot
- For the Dumplings
- 1 cup Flour
- 2 Eggs
- 1/4 cup Milk
- 1/4 teaspoon Nutmeg
- 1/4 cup Chopped Chives
- For the Soup
- 1 Turkey neck
- 2 turkey wings
- 1 Ham Hock
- 1 1/2 gallons Turkey Stock, made from turkey parts
- 2 tablespoons unsalted butter
- 1 large onion, diced
- 2 large carrots, diced
- 1 bunch celery, diced
- 2 cloves garlic, minced
- 1 cup tarragon, chopped
- 2 cups diced ham
- ham hock meat (reserved from stock)
