- MARINADE:
- 11 oz. boneless chicken breast cutlets
- 2 tbsp. olive tapenade
- 2 tbsp. fresh basil, optional
- salt and pepper to taste
- 3 - 4 slices PC Prosciutto or Serrano Ham or Pancetta
- Optional - place one or two fresh sage leaves under the ham on each piece of chicken
- 2 - 4 tbsp. lemon juice, depending on size of rolls - most of it goes in the trash
- 1 - 2 tbsp. olive oil - ditto
- 1 clove garlic, minced
- 1 tsp. dijon
- salt and pepper

- 2 1/4 tsp. unbleached flour
- pinch of freshly grated nutmeg

- 1 tsp. fresh thyme, stripped from stems
- 2/3 cup less 2 tablespoons 1% milk
- 2 tablespoons heavy cream or creme fraiche (I used the cream)
- 3 oz. (85 g) diced Gruyere, Comte, or Emmental

- 2 shallots, finely minced
- 1 ounce spicy pancetta, cut into narrow strips
- 1 ounce regular pancetta, cut into narrow strips
- 1 clove garlic, minced
- 1 egg, at room temperature
- 30 grams 95% fat free cream cheese or Mascarpone
- 2 tablespoons heavy cream, at room temperature
- 1/4 cup pasta cooking water, if necessary
- 1/2 ounce shredded parmesan
- 1/2 ounce shredded pecorino romano
- freshly ground nutmeg
- sea salt and freshly ground black pepper to taste
- 2 tbsp. fresh basil chiffonade

- 50 grams Catelli Smart pasta of choice - Penne or Rotini or Fusilli or Bows (Mario used corzetti pasta, which was hand-made circles of dough)
- 30 grams spreadable or soft goat cheese
- 2 tbsp. light ricotta
- pinch freshly grated nutmeg
- pinch hot pepper flakes (my addition)
- 2 tablespoons freshly grated pecorino romano
- 3 tablespoons minced fresh herbs - basil, oregano, thyme, rosemary, mint, marjoram or whatever you have on hand
- Salt and freshly ground black pepper (to taste)
- 1 tablespoon good olive oil
