  • MARINADE:
  • 11 oz. boneless chicken breast cutlets
  • 2 tbsp. olive tapenade
  • 2 tbsp. fresh basil, optional
  • salt and pepper to taste
  • 3 - 4 slices PC Prosciutto or Serrano Ham or Pancetta
  • Optional - place one or two fresh sage leaves under the ham on each piece of chicken
  • 2 - 4 tbsp. lemon juice, depending on size of rolls - most of it goes in the trash
  • 1 - 2 tbsp. olive oil - ditto
  • 1 clove garlic, minced
  • 1 tsp. dijon
  • salt and pepper

  • 4 ounces chopped Grandpa or rosemary ham, 1/4" dice
  • 3 large eggs
  • 2 1/4 tsp. unbleached flour
  • pinch of freshly grated nutmeg
  • freshly ground black pepper
  • sea salt to taste
  • 1 tsp. fresh thyme, stripped from stems
  • 2/3 cup less 2 tablespoons 1% milk
  • 2 tablespoons heavy cream or creme fraiche (I used the cream)
  • 3 oz. (85 g) diced Gruyere, Comte, or Emmental

  • 50 grams Catelli Smart pasta of choice - Penne or Rotini or Fusilli or Bows (Mario used corzetti pasta, which was hand-made circles of dough)
  • 30 grams spreadable or soft goat cheese
  • 2 tbsp. light ricotta
  • pinch freshly grated nutmeg
  • pinch hot pepper flakes (my addition)
  • 2 tablespoons freshly grated pecorino romano
  • 3 tablespoons minced fresh herbs - basil, oregano, thyme, rosemary, mint, marjoram or whatever you have on hand
  • Salt and freshly ground black pepper (to taste)
  • 1 tablespoon good olive oil
