Beef Tenderloin with Parmesan Rissoto

Traditional risotto is anything but quick and easy
- 4 cups low-sodium chicken broth
- 1 cup Arborio rice
- 6 tablespoons unsalted butter
- 1 tablespoon vegetable oil
- 4 (6- to 8-ounce) center-cut filets mignons, about 2 inches thick
- Salt and pepper
- 1 onion, chopped fine
- 2 garlic cloves, minced
- 2 ounces Parmesan cheese, grated (1 cup)

Roasted Broccoli with Cherry Tomatoes

- 2 bunches broccoli, cut into 2 1/2-inch long florets
- 1 medium shallot, roughly chopped
- 1 pint cherry tomatoes, whole
- 3 cloves garlic, roughly chopped

- 4 tablespoons olive oil

Apple Caramel Dip

- 1 package (8 ounces) cream cheese, softened
- 1/2 cup packed brown sugar
- 1/4 cup caramel ice cream topping
- 1 teaspoon vanilla extract
- 1 cup marshmallow creme

- 2 tablespoons lemon juice

Warm Bacon Potato Salad

vFor the vinaigrette: Mix all the ingredients together in a small bowl and set aside
- Vinaigrette:
- 1/2 cup white wine vinegar
- 1 tablespoon coarse-grained mustard
- 1 tablespoon sugar
- 2 1/2 pounds red potatoes, diced into 1-inch cubes
- Salt
- 6 bacon slices, chopped
- 1 medium sized red onion, diced
- Freshly ground black pepper
- 2 cloves garlic, chopped

Neely's BBQ Spaghetti

For the BBQ sauce: Combine all of the sauce ingredients in a stockpot or large Dutch oven
- Neely's BBQ Sauce:
- 16 ounces ketchup
- 8 ounces water
- 3 ounces brown sugar
- 3 ounces white sugar
- 1/2 tablespoon freshly ground black pepper
- 1/2 tablespoon onion powder
- 1/2 tablespoon dry mustard powder
- 1-ounce lemon juice
- 1-ounce Worcestershire sauce

- 1-ounce light corn syrup
- 2 ounces Neely's BBQ Seasoning, recipe follows

- 1 bell pepper
- 1 onion

- 10 ounces frozen whole strawberries (2 cups)
- 3/4 cup whole milk, room temperature
- 6 large egg whites, room temperature
- 2 teaspoons vanilla extract
- 2 1/4 cups (9 ounces) cake flour
- 1 3/4 cups (12 1/4 ounces) granulated sugar
- 4 teaspoons baking powder
- 1 teaspoon salt
- 12 tablespoons unsalted butter, cut into 12 pieces and softened
- FROSTING
- 10 tablespoons unsalted butter, softened
- 2 1/4 cups (9 ounces) confectioners' sugar
- 12 ounces cream cheese, cut into 12 pieces and softened
- Pinch salt
- 8 ounces fresh strawberries, hulled and sliced thin (about 1 1/2 cups
