Chef Meg's Tomato Soup

Top this with a bit of blue cheese (nutrition not included) for a real pop of flavor
- 2 T olive oil 1 yellow or white onion, chopped
- 3 cloves garlic, minced 2 pounds tomatoes, de-seeded, chopped
- 1/4 t red pepper flakes
- 1 T brown sugar
- 1/2 t thyme, dried
- 4 oz. bread, crust removed (about 4 small slices)
- 12 oz chicken or vegetable stock
- 1 T balsamic vinegar black pepper to taste
- 1/2 cup croutons (optional)
- 2 T blue cheese crumbles (optional)
Sweet Pepper Coconut Corn Chowder

A fantastic blend of sweet and spicy flavors that work together beautifully
- 2-3 tbsp oil
- 1 medium whole leek, finely diced
- 3 medium carrots, thinly sliced
- 3 cloves garlic, finely chopped
- 1/8 tsp cayenne pepper
- 1 jalapeño pepper, diced; stems and seeds removed
- 14 oz can garbanzo beans
- 1 each medium red and yellow pepper, seeds and stems removed and thinly sliced
- 1 tbsp coarse sea salt
- 2 cups corn kernels (fresh, frozen or canned)
- (2) 14 oz cans coconut milk (or light coconut milk)
- 2 cups water
