Festive Kale Salad "Oh She Glows"

Blend dressing ingredients in mini processer until smooth, addd to chopped kale, let sit 30-60 minutes
- Dressing:
- 2 medium de-stemmed kale, chopped fine
- 1/4-1/2 cup dried cranberries (for garnish)
- 1 cup pecan halves, toasted
- 1 1/2 tbsp nutritional yeast
- 1 tbsp olive oil
- 2 pinches sea salt
- 2 garlic cloves
- 1/4 c fresh lemon
- 2-4 tbsp olive oil
- 1/4 tsp sea salt
- 1/4 tsp pepper
Thai Noodle Bowl

Mix sauce ingredients altogether in a blender, store in fridge
- Peanut Sauce:
- 1 large garlic clove, minced
- 1 tbsp. sesame oil
- 3 tbsp. smooth peanut butter
- 2 tsp fresh ginger
- 3 tbsp fresh lime juice
- 2 tbsp low sodium soya sauce or tamari
- 2 tsp honey
- Rice noodles, cook as directed
- Chop veggies, very fine: celery, carrot, pepper (red for color), any others as desired.
- 1/2 c - 1 c of chopped peanuts
Chocolate Cake Mix Mug Cake

In microwave safe bowl, add 6 tbsp cake mix, water and applesauce
- 6 tbsp. chocolate cake mix
- 1 tbsp. water
- 2 tbsp. unsweetened applesauce *see note*
- 2 tbsp. chocolate chips (optional)
Choco Banana Power Smoothie

Blend all together in blender
- 1-2 tbsp. Cacao Powder
- 1 Banana
- 1/4 Avocado
- 2 tbsp. Hemp or Chia Seeds
- 1 cup Water or Coconut Water (can substitute coconut milk for creamier texture)
- 1 tsp. Maca Powder (Optional)

- 1 tbsp. vegetable oil (for the pan)
- 2 cups buttermilk, not low fat
- 2 large eggs, beaten
- 1 tsp vanilla extract
- 3 tbsp unsalted butter, melted

- 1/4 cup sugar
- 2 tsp. baking powder
- 1 tsp baking soda
- 1/2 tsp salt

Coconut Kale Quinoa

- 1/4 tsp cumin powder
