PAPAS EN SALSA CALIENTE

Pelar y cocer las papas con el agua y la sal necesarias
- 3 libras de papas pequeñas,
- 3 onzas de mantequilla,
- 1 onza de harina,
- 2 ½ tazas de leche,
- 2 huevos cocidos duros,
- 1/2 cucharadita de mostaza,
- sal, pimienta y pimentón al gusto.
TALLARINES CON CARNE DE CHANCHO

Cocer los fideos con suficiente agua y sal, escurrir y pasar por agua fría para evitar que se peguen
- 1 libra de fideo tallarin,
- 1 cabeza de ajo molido,+/-
- 1/2 libra de cebolla paiteña rallada,
- 2 cucharadas de salsa de tomate,
- 2 onzas de zanahoria amarilla picada,
- 1 onza de hongos secos, remojados y picados,
- 1 libra de carne de chancho, cocida y picada,

Apple-Roasted Pork Chops with Roast Applesauce

To marinate the pork chops, place the chops in a large, heavy-duty sealable plastic bag or a large nonreactive dish
- For the marinade:
- 6 loin pork chops, each 7 to 8 oz. and 1 inch thick, trimmed of fat and edges scored
- 2/3 cup apple cider
- 1 tsp. olive oil
- 1 small yellow onion, sliced
- 1 Tbs. fresh thyme leaves
- 2 garlic cloves, minced
- 1 tsp. peppercorns
- Salt and freshly ground pepper, to taste
- 2 tart green apples
- 1 Tbs. unsalted butter
- 1 Tbs. olive oil, or as needed
- 1 generous cup dried apples
- 1 yellow onion, sliced
- 1/4 cup apple cider
- 1/4 cup Calvados or other dry apple brandy
- For the roast applesauce:
- 8 to 10 tart apples, half green and half red, quartered
- 3/4 cup water
- Pinch of salt
- 1/4 cup sugar, or to taste
- 1/2 tsp. ground cinnamon

- 1/4 water
- 1 teaspoon instant beef or chicken bouillon granules
- 3/4 cup hot water or 3/4 cup meat or poultry drippings plus hot water
