CARNE CON CHAMPIÑONES

En el aceite caliente freír los pedazos de carne hasta que estén bien dorados
- 2 libras de lomo de res, cortado en pedazos pequeños,
- 2 cucharadas de aceite,
- 2 tazas de agua,
- 1/2 cucharadita de jugo de limón,
- 2 onzas de mantequilla,
- 1/2 onza de harina de trigo = 1 cucharada raza
- 1 taza de agua caliente o caldo,
- 2 cubos de caldo de gallina,
- 1/2 taza de crema de leche,
- 1 tarro de 4 onzas de champiñones,
- sal, pimienta y nuez moscada al gusto
ORANGE Barbecue Sauce

Mix all ingredients in a 1-quart, glass measuring cup
- 1/4 cup packed brown sugar
- 1/2 teaspoon dry mustard
- 1/8 teaspoon ground cloves
- 1/2 teaspoon Worcestershire sauce
- 1/3 cup chopped onion
- 1 ½ teaspoons grated orange peel
- 1/3 cup orange juice
- 3/4 cup ketchup
SHEPERD'S PIE

1.- Peel and quarter potatoes, boil in salted water until tender (about 20 minutes)
- 1 1/2 lbs ground round beef (beef & pork)
- 1 onion chopped
- 1-2 cups vegetables - chopped carrots, corn, peas
- 1 1/2-2 lbs. potatoes (3 big ones)
- 8 tablespoons butter (1 stick)
- 1/2 cup beef broth
- 1 teaspoon Worcestershire sauce
- Salt, pepper, other seasonings of choice
Basil Chicken With Tomato-Alfredo Sauce

- 8 skinless chicken drumsticks
- 1 tsp. salt
- 1/2 tsp. pepper
- 1 1/4 cups bottled alfredo sauce
- 1 pt. grape tomatoes
- Fresh basil (1 1/2 cups lightly packed)

- For cake:
- 1 cup all-purpose flour
- 3/4 cup whole wheat pastry flour
- 1 cup granulated sugar
- 3/4 cup unsweetened cocoa powder (not Dutch process)
- 1-1/2 teaspoons baking powder
- 1-1/2 teaspoon baking soda
- 1 teaspoon pumpkin pie spice
- 1 teaspoon salt
- 1 cup nonfat buttermilk
- 1 15 oz. can unsweetened pumpkin puree
- 3/4 cup dark brown sugar packed
- 1 large egg white at room temperature
- 1 large egg at room temperature
- 1/4 cup canola oil
- 1/4 cup light corn syrup
- 1 tablespoon vanilla extract
- For Glaze and Garnish:
- 1/2 cup packed confectioners' sugar
- 1 tablespoon nonfat buttermilk
- 2 tablespoons mini chocolate chips

Place a rack in the middle of the oven and preheat the oven to 350 degrees
- For glaze:
- 1 cup yellow cornmeal
- 1 cup all-purpose flour
- 1/4 cup cake flour (used 1/4 cup of all-purpose flour)
- 1 cup sugar
- 2 tablespoons baking powder
- 1-1/2 teaspoons salt
- 4 large eggs, at room temperature
- 3 ounces (3/4 stick) unsalted butter
- 1/3 cup vegetable oil
- 1 cup milk
- 1/2 cup buttermilk (used half cup of 18% coffee cream and soured milk with 2 teaspoons fresh squeezed lemon.)
- 2 teaspoons vanilla extract
- 3 ounces (3/4 stick) unsalted butter
- 1/4 cup (blue agave syrup)
- 1/3 cup water (1/4 cup water)
Easy Broccoli Cottage Bake

HEAT oven to 350°F. MIX all ingredients until well blended
- 1 container (16 oz.) BREAKSTONE'S or KNUDSEN 2% Milkfat Low Fat Cottage Cheese
- 1 pkg. (10 oz.) frozen chopped broccoli, thawed, well drained
- 3/4 cup KRAFT 2% Milk Shredded Sharp Cheddar Cheese
- 1 jar (7 oz.) roasted red peppers, well drained, chopped
- 4 eggs, beaten
- 3 Tbsp. each KRAFT Reduced Fat Parmesan Style Grated Topping and plain dry bread crumbs

- 3/4 cup sugar
- 1/2 cup (1 stick) unsalted butter, room temperature
- 1 large egg
- 2 tablespoons finely grated lemon peel
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1 1/4 cups all purpose flour
- Nonstick vegetable oil spray
- Colored sugar crystals or nonpareils
Roasted Peaches with cookie crumble

1. Preheat oven to 350ºF
- 5 * 5 gingersnaps
- 1/4 * 1/4 cup pecan halves
- 2 * 2 tablespoons all-purpose flour
- 1 1/2 * 1 1/2 tablespoons packed light brown sugar
- 3 * 3 tablespoons unsalted butter, chilled, cut into small pieces
- 3 * 3 ripe peaches, halved and pitted
- 1/2 * 1/2 cup heavy cream
- 1 * 1 tablespoon sugar

- 1/2 C. butter, room temp.
- 1 (8 oz.) Cream Cheese, room temp.
- 3 C. Powdered Sugar
- 5 T. Cocoa Powder
- 2 t. Vanilla
- 1 C. heavy Cream
