Almond Biscuits with Berry Butter

Preheat oven to 450 degrees
- For butter:
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1 tsp. salt
- 1/2 cup butter (1 stick)
- 3/4 cup milk
- 1/2 cup toasted sliced almonds
- 2 tablespoons honey
- 1 stick softened butter
- 1/3 cup strawberry preserves
- /4 cup sliced fresh strawberries
Yogurt Pancakes

Vickie, these work great at 11,500 feet but I haven't tried them at sea level
- 1 cup flour
- 1/2 teaspoon salt (I usually use salted butter and just a little less salt)
- 3 teaspoons baking powder
- 1 egg
- 1 cup plain/natural yogurt (Here people love the "drinkable" yogurt in bottles, so I buy that but I look for brands that are a little thicker-don't buy light)
- 2 tablespoons butter, melted
Eggplant Parmesan II

Preheat oven to 350 degrees F (175 degrees C)
- 3 eggplant, peeled and thinly sliced (maybe less)
- 2 eggs, beaten
- 4 cups Italian seasoned bread crumbs
- 6 cups spaghetti sauce, divided
- 1 (16 ounce) package mozzarella cheese, shredded and divided
- 1/2 cup grated Parmesan cheese, divided
- 1/2 teaspoon dried basil
Martha White Cornbread

Mix all ingredients together and bake at 425F for 25-30 minutes
- 2 C self rising cornmeal mix
- (Made by 1C flour, 1TBS baking powder, 1 tsp salt, 1/4 cup butter)
- 1 1/4 C milk
- 1/4 C vegetable oil or shortening
- 1 egg, beaten
- 1-2 tsp sugar (optional)

- 1 egg
- 2 egg whites
- salt and pepper, to taste

1. 1 Set oven to 350 degrees
- 3 cups cake flour
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1/4 teaspoon salt
- 1 1/2 cups unsweetened cocoa
- 2 1/2 cups strong coffee
- 1/2 cup unsalted butter (room temperature)
- 2 teaspoons unsalted butter (room temperature)
- 1/3 cup vegetable oil
- 1 1/2 cups superfine sugar (granulated works fine)
- 1 1/2 cups dark brown sugar
- 5 large eggs
- 1 teaspoon pure vanilla extract
Mom's Cheeseball Recipe

Mix together and roll into ball and then you can roll in pecans or walnuts, chopped
- 6-8oz Cream Cheese block
- small can of crushed pineapple, drained well
- 3 green onions, chopped
- half of a green pepper, chopped
- chopped nuts, optional
Black Beans and Rice/Pasta with Veggies

Soak the beans in water overnight
- Black beans/ red beans
- Fresh Garlic
- Onion
- Green Pepper
- Carrots
- Potatoes
- (You can pick which of these veggies you want to use)
- Oil- olive is best, but others work and are cheaper
- Rice/ Pasta (garlic and possibly onions)
Black Bean and Papaya Salsa Recipe

In a large mixing bowl, combine black beans, papaya, bell peppers, red onion, pineapple juice, lime juice, cilantro...
- 1 cup cooked or canned black beans
- 2 ripe papayas, peeled, seeded and diced small
- 1/2 red bell pepper, diced small
- 1/2 green bell pepper, diced small
- 1/2 red onion, diced small
- 3/4 cup pineapple juice
- 1/2 cup lime juice (about 4 limes)
- 1/2 cup chopped cilantro
- 2 Tablespoons ground cumin
- 1 Tablespoon minced red or green chile pepper of your choice
- Salt
- Fresh cracked black pepper
Papaya Raisin Muffins or Bread Recipe

Preheat oven to 325 F. Line muffin tins with muffin papers
- Cinnamon Cream Cheese Frosting:
- 1 package French vanilla cake mix
- 3 eggs, lightly beaten with a fork
- 1/3 cup vegetable oil (or applesauce)
- 1/2 cup sour cream (or cream cheese)
- 1/4 cup water
- 1/2 cup applesauce
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground allspice
- 1/2 teaspoon ground ginger
- 1 cup mashed fresh papaya
- 1 cup raisins, soaked in hot water for 15 minutes and drained (you can also puree these)
- 1/4 cup chopped pecans, optional (or quick cook oats)
- 3 ounces cream cheese, at room temperature
- 1/2 cup confectioners' powdered sugar
- 1 Tablespoon cream or whole milk
- 1/2 teaspoon pure vanilla extract
- 1/4 teaspoon ground cinnamon
