CHEESEBURGER STEW

Comfort food on a cold winter's day
- 2 lb. groung beef OR ground turkey
- 2 lb. potatoes - cut into bite sized cubes
- 2 carrots - cut into bite sized cubes
- 1 large onion - cut into bite sized cubes
- 2 cans cheddar cheese soup
- salt & pepper to taste
- water as needed
White Chocolate - Macadamia Nut Cookies

A great chocolate chip cookie
- 2 cups flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup butter, softened
- 3/4 cup granulated sugar
- 1/2 cup light brown sugar
- 1/4 cup dark brown sugar
- 1 egg
- 1 teaspoon vanilla extract
- 12 ounces white chocolate chips (or bulk white chocolate cut into 1/4-inch chunks)
- 1/2 cup macadamia nuts, coarsely chopped
SNICKER DOODLE COOKIES

A silky textured dough makes a crisp on the outside, tender in the inside cookie
- 2 cups SHORTENING
- 3 cups SUGAR
- 4 EGGS
- 5 1/2 cups FLOUR
- 4 tsp. CREAM OF TARTER
- 2 tsp. BAKING SODA
- 1/2 tsp SALT
- CINNAMON-SUGAR MIX TO ROLL DOUGH IN
NEAPOLITAN COOKIES

I usually make 3 separate batches of dough, each one a different flavor layer
- 1 cup MARGARINE or BUTTER
- 1 1/2 cups SUGAR
- 1 EGG
- 1 tsp. VANILLA
- 1 1/2 tsp. BAKING POWDER
- 1/2 tsp. SALT
- 2 1/2 cups FLOUR
- 1/2 tsp. ALMOND EXTRACT
- 1 square (1 oz) UNSWEETENED CHOCOLATE -melted
- 1/2 cup CHOPPED PECANS or WALNUTS
- RED FOOD COLORING
Pumpkin Cake (or muffins)

Moist, semi-dense, full of flavor and spices
- 4 eggs
- 2 C. sugar
- 2 tsp. baking powder
- 2 tsp. baking soda
- ½ tsp. salt
- ½ tsp. cinnamon
- 3 C. flour
- 3 C. pumpkin (1 large can)
- 1 C. chocolate chips
- 1 C. chopped nuts
BREAKFAST IN A BAR

These are easy to make and delicious, although a bit on the rich side
- 1 cup PACKED BROWN SUGAR
- 1/4 cup MELTED BUTTER
- 1/4 cup MELTED MARGARINE
- 1 EGG
- 2 cups QUICK OATS
- 1 tsp. BAKING POWDER
CARROT PUDDING

This is NOT pudding as we know it
- 2 cups CARROTS - grated
- 1 cup SHORTENING
- 1 1/2 cupos DARK BROWN SUGAR
- 2 1/2 cups FLOUR
- 2 tsp. BAKING SODA
- 1 tsp. BAKING POWDER
- 1/4 tsp. SALT
- 4 EGGS - separated
- 2 Tbsp. VANILLA
- 2 Tbsp. LEMON JUICE
- 2 Tbsp. COLD WATER
BROWNIES (with Cherries, nuts & choc. chips)

- for ganache:
- 120 milliliters ORANGE JUICE
- 90 grams DRIED CHERRIES
- 6 EGGS (1 less if ex-large)
- 480 grams SUGAR
- 380 grams SEMISWEET or BITTERSWEET CHOCOLATE -chopped into small pieces
- 240 grams BUTTER
- 150 grams FLOUR
- 30 grams COCOA POWDER
- 90 grams NUTS (walnuts or pecans)
- 45 grams CHOCOLATE CHIPS
- 200 milliliters HEAVY CREAM
- 200 grams CHOCOLATE
ITALIAN MEATBALL COOKIES

A spiced, chocolate treasure with raisins, nuts and chocolate chips
- TBSP. EACH:
- 1 CUP SHORTENING
- 1 1/2 CUPS SUGAR
- 3 EGGS
- 3/4 CUP MILK
- 1 TSP. VANILLA
- 5 CUPS FLOUR
- 5 TSP. BAKING POWDER
- CINNAMON
- GROUND CLOVES
- NUTMEG
- 3/4 CUP COCOA POWDER
- CUP EACH:
- NUTS (traditional Walnuts but I use Pecans)
- RAISINS
- CHOCOLATE CHIPS
RASPBERRY PECAN THUMBPRINT COOKIES

I prefer raspberry with pecans but, you can use what ever combination of nuts and jams you prefer
- 1 lb. 4 oz. (4 cup) FLOUR
- 12 oz. ( 2 cup) CHOPPED PECANS
- 1 tsp. CINNAMON
- 1/2 tsp. NUTMEG
- 1/2 tsp. SALT
- 1 lb. (2 cup) BUTTER, softened
- 8 oz. (1 cup) BROWN SUGAR
- 4 tsp. VANILLA
- RASPBERRY JAM (or any flavor you prefer)
