- 5-6 small-medium tomatoes
- 4 small garlic cloves (or two large ones)
- Jalapeño peppers (choose the type & amount based on how spicy you like your salsa)
- Cilantro (about 1/2 cup chopped, but again, use to your liking)
- Red onion (1 large or two small)

Place the beans in a nonreactive pan
- 1 pound dried black beans
- 3 quarts water
- 2 bay leaves
- 1 cup extra virgin olive oil (FINE)
- 2 large red bell peppers, seeded and chopped
- 2 shallots, chopped
- 2 onions, chopped
- 8 cloves garlic, chopped
- 1 tablespoon ground cumin
- 2 tablespoons dried oregano
- 2 tablespoons chopped fresh oregano leaves
- 1 1/2 tablespoons sugar
- 2 tablespoons salt
- 1 red onion, diced, for garnish
- 8 ounces sour cream for garnish

Poultry: Hot Wings with Blue Cheese Dip

In a bowl, using the back of a fork, mash the blue cheese into pea-size pieces
- 4 oz blue cheese, such as Maytag
- 1/2 cup mayonnaise
- 1 cup buttermilk
- Salt & freshly ground pepper, to taste
- 2 quarts canola oil
- 2 lbs chicken wings, tips trimmed off
- 1 cup all purpose flour
- 1/2 cup hot wing sauce (Williams Sonoma)
- 2 T unsalted butter, melted
- Celery stalks for serving

In a large casserole pot, heat the oil over a medium-high flame
- 1/2 cup extra-virgin olive oil
- 2 small onions, finely chopped
- 2 garlic cloves, finely chopped
- 2 stalks celery, finely chopped
- 2 carrots, peeled and finely chopped
- 1/2 teaspoon sea salt
- 1/2 teaspoon freshly ground black pepper
- 2 (32-ounce) cans crushed tomatoes
- 2 dried bay leaves
Sauces: Mary Ann's Marinara Sauce

- 2 bell peppers
- 2 large cans tomato puree
- Salt
- 1 T oregano
- 2 T basil
- Herb seasoning
- 3 bay leaves
- 1/4 cup sugar (or to taste)
- 1 t allspice
- Juice of 1 lemon
