Orange Beef Stir Fry

Place the orange peel and juice in a large bowl
- Grated peel of 1 orange and juice of 2 oranges
- 2-1/2 Tbls EVOO
- 1 Tbls white wine vinegar
- 1 lb skirt steak, thinly sliced on the diagonal and slices halved crosswise
- 1 bunch scallions, white parts thinly sliced and green parts cut into 1 inch pieces
- 1 Tbls. brown sugar
Fruit & Brie Quesadillas

Spread half of the brie on 1 tortilla and top with scallions
- 4 oz brie, rind removed
- 2 - 8 inch flour tortillas
- 2 scallions, chopped
- 4 Tbls fruit salsa
Southwest Hash Browns

In a large skillet, melt butter over medium heat
- 1 - 2 lb pkg shredded frozen hash browns (or 2 large Idaho potatoes, cooked and shredded)
- 3 Tbls butter
- 2 tsp. Penzeys Taco Seasoning
- 1-2 tsp salt, to taste
- 1/4 - 1/2 tsp freshly ground pepper, to taste
Apple Cider Gravy

Saute the apples and onions in olive oil until tender, about 5-6 min
- 1 Tbls. butter
- 1 Tbls. flour
- 1/2 cup cloudy apple cider
- 1/2 cup chicken stock
- 1 small onion, yellow or red, thinly sliced
- 1/2 Tbls. olive oil (EVOO)
- 1 apple, thinly sliced
- 1 tsp. dried thyme
Scallop Potatoes and Ham

Preheat oven to 350F. Cube ham and set aside
- 2 cups ham, cubed
- 5 potatoes, peeled and sliced about 1/4" thick
- 6 Tbls. butter
- 1 medium onion, chopped
- 1/2 cup flour
- 4 cups milk
- 1/2 tsp. marjoram
- 1-1/2 tsp. salt
- 1/8 tsp. black pepper
- 1 pinch ground nutmeg
Grilled Lemon & Rosemary Chicken

Place chicken between sheets of plastic wrap and pound on work surface to thickness of 1/4 to 1/2 inch
- 4 large skinless boneless chicken breast halves
- 3/4 bottle Italian-style dressing
- 1-1/2 Tbls. chopped fresh rosemary
- 1 lemon, cut crosswise into 1/8” rounds
Apple Cider Plus

Heat cider for 15 mins. Add other ingredients
- 4-1/2 cups cider
- 1 stick cinnamon
- 1/4 tsp. cinnamon
- 2 Tbls. lemon peel
- 1-1/2 cups unsweetened pineapple juice
Panera Bread Broccoli Cheese Soup

serves/makes: 4 DIRECTIONS: Saute onion in butter
- 1 tablespoon butter, melted
- 1/2 medium onion, chopped
- 1/4 cup melted butter
- 1/4 cup flour
- 2 cups half-and-half
- 2 cups chicken stock or bouillon
- 1/2 pound fresh broccoli
- 1 cup carrots, julienned
- salt and pepper, to taste
- 1/4 teaspoon nutmeg
- 8 ounces grated sharp cheddar cheese
Cranberry White Wine Spritzer

- 1 bottle dry white wine (such as Sauvignon Blanc)
- 1-1/2 cups cranberry juice cocktail
- 1 can (12 oz) seltzer water
