Prosciutto-Wrapped Chicken Stuffed with Herb Ricotta

Preheat the oven to 400 degrees
- 1/2 cup fresh ricotta
- Salt and pepper
- 3 tablespoons grated parmigiano-reggiano
- 1 small clove garlic, grated or pasted
- 1 tablespoon finely chopped flat-leaf parsley
- A few leaves basil, chopped
- A couple sprigs fresh thyme, finely chopped
- 2 small pieces skinless, boneless chicken breast, butterflied
- EVOO, for drizzling
- 4 thin slices prosciutto di parma
- A splash white wine
- 1 tablespoon butter

- 3 eggs
- 1 cup milk
- 3 cups flour
- 1/2 tsp salt

Pork Chops with Apple Chutney

Directions Preheat oven to 400 degrees
- 4 tablespoons olive oil
- 2 teaspoons coarse salt, plus more for seasoning
- 1 teaspoon freshly ground black pepper, plus more for seasoning
- 4 boneless center-cut pork chops (1 1/4 pounds), cut 3/4 inch thick
- 1 large onion, cut into 1/2-inch dice
- 4 green apples (such as Granny Smith), peeled, cored, and cut into 1/2-inch dice
- 1/2 cup cider vinegar
- 1/2 cup golden raisins
- 1 teaspoon ground ginger
- 1/4 teaspoon dry mustard
- Pinch of cayenne pepper

For mustard sauce, in a small saucepan over med-high heat, bring 1/4 cup of apple cider to a boil
- 1/4 cup apple cider, plus 1 TB. apple cider
- 1/4 cup Dijon mustard
- 1 tsp. chopped fresh tarragon
- 1 lb. ground sirloin
- 1/2 (1 oz) pkg onion soup mix
- 1/4 cup cracked black pepper
- Kaiser rolls, toasted
- Lettuce, tomato, red onion slices

Combine peaches, nectar, sugar, concentrate, and raspberries in food processor or blender; blend until smooth
- 1-1/2 cups thawed frozen sliced peaches
- 1 cup peach nectar
- 1/2 cup sugar
- 3/4 cup frozen orange-peach-mango juice concentrate, thawed
- 3 frozen or fresh raspberries
- 2 – 750 ml bottles chilled champagne
Mango Salsa

In a medium bowl combine mango and/or papaya, red sweet pepper, green onions, olive oil, minced shallot
- 3/4 cup chopped fresh mango and/or papaya
- 1/4 cup chopped red sweet pepper
- 3 sliced green onions
- 2 Tbls olive oil
- 1 Tbls minced shallot
- Salt
- Pepper

- 2 sheets frozen puff pastry, thawed
- 6 tablespoons tomato paste
- 6 tablespoons prepared olive tapenade
- 1/2 cup shredded mozzarella

- 1 egg
- 2 tablespoons water
Olive Garden Chicken & Gnocchi Soup

copycat version - I reduce amount of milk and added rue to make a thicker soup
- 1/2 onion, diced
- 1 stalk celery, diced
- 1 clove garlic
- 1/2 carrot, shredded
- 1 Tbls olive oil
- 2 cups cooked chicken breast, diced
- 4 cups chicken stock
- Salt and pepper, to taste
- 1 tsp dried thyme
- 16 oz pkg potato gnocchi
- 1/2 cup half-and-half
- 1/2 cup 2% milk
- 1 cup fresh spinach, chopped
- 2 Tbls butter
- 2 Tbls flour
Appetizer Roll Ups

In a bowl, combine the cream cheese, cilantro, peppers and garlic
- Roast beef:
- 4 oz. cream cheese, softened
- 1/4 minced fresh cilantro or parsley
- 2-3 Tbls. minced banana peppers
- 1 garlic clove, minced
- 1/2 lb. thinly sliced cooked roast beef
- Ham & turkey:
- 12 oz. cream cheese, softened
- 1/2 cup shredded carrot
- 1/2 cup shredded zucchini
- 4 tsp. dill weed
- 1/2 lb. thinly sliced fully cooked ham
- 1/2 lb. thinly sliced cooked turkey

- 6 apples, peeled, cored, & roughly chopped
- 1/4 cup brown sugar
- 1/8 cup sugar
- 1/4 cup water
- 1/2 tsp apple pie spice
