Red Wine Linguine

Cook pasta in 2 cups red wine, salt and 4 cups water; drain
- 1 lb linguine
- 2 cups plus 2 Tbls red wine
- 1 Tbls salt
- 1/4 cup EVOO
- 2 Tbls lemon juice
- 2/3 cup shredded parmesan
- 3 Tbls parsley
Galena Street Chicken & Rib Rub

Really good on grilled turkey wings also - cut wings into sections, then sprinkle on heavily before grilling
- 1-2 tsp per lb - rub on pork ribs, use a bit less for chicken

- 1 pkg (8 oz) cream cheese, softened
- 1/4 cup finely chopped red onion
- 1 clove garlic, pan toasted, peeled and chopped
- 1/4 tsp coarsely ground black pepper
- 2 Tbls. chopped fresh parsley
- Ritz Roasted Vegetable crackers
Vanilla Applesauce

Combine all ingredients in a wide, heavy saucepan over medium heat
- 14 ripe firm apples (about five pounds), such as Gala, peeled, cored, and quartered
- 1 cup apple cider, plus more as needed
- 1/4 cup sugar, plus more as needed
- 1 large cinnamon stick
- 1 teaspoon ground ginger, plus more as needed
- 1/2 teaspoon ground nutmeg, plus more as needed
- 2 tablespoons freshly squeezed lemon juice
- 1 vanilla bean, split lengthwise and scraped
Skirt Steak with Pepita Sauce and Warm Tortillas

Heat grill. Season steak with 1/2 tsp each salt and pepper
- 1-1/2 lb skirt steak
- Kosher salt and pepper
- 8 - 6 in flour tortillas
- 1/2 red onion, finely chopped
- 1/2 cup fresh cilantro
- 1/4 cup pepitas or sunflower seeds, roughly chopped
- 2 Tbls. EVOO
- 2 Tbls. lime juice
Balsamic Green Beans

- 2 pounds fresh haricots verts (tiny green beans), trimmed
- 6 large shallots
- Vegetable oil
- 1/2 cup balsamic vinegar
- 1 tablespoon light brown sugar
- 3 tablespoons butter
- Salt and freshly ground pepper to taste
- 1/2 cup lightly salted roasted almonds, coarsely chopped
- 1/2 cup cooked and crumbled bacon (about 5 slices)
Peppercorn Chicken Salad

In a medium bowl, toss together the chicken, celery and onion
- 1 1/2 cups cooked, finely chopped chicken
- 1/3 cup finely chopped celery
- 1 1/2 Tbls. finely chopped onion
- 1/2 cup mayo
- 2-3 tsp. Penzeys Creamy Peppercorn dressing mix

- 2-1/2 cups flour
- 2 Tbls sugar
- 1 egg yolk & enough mild to make 3/4 cup liquid
- 1 tsp salt
- 1 cup butter
Blueberry Crumb Bars

can be doubled and baked in 13x9 inch pan (still only use 1 egg)
- Filling:
- 1-1/2 cups flour
- 1/4 cup granulated sugar
- 1/4 cup brown sugar
- 1/2 tsp baking powder
- Pinch salt
- 1 egg
- 3/4 tsp vanilla
- 1/2 cup butter, chilled and cut into cubes
- 1-1/2 tsp cornstarch
- 1/4 cup granulated sugar
- 2 tsp lemon juice
- 2 cups fresh or frozen blueberries, well drained and room temp
Buttermilk Oven Fried Chicken

Place chicken and buttermilk in a large bowl or zip-top plastic bag, turning chicken to coat all sides
- 3 skinned and boned chicken breast halves (about 1-1/3 lbs.)
- 5 skinned and boned chicken thighs (about 1-1/4 lbs.)
- 2 cups low-fat buttermilk
- 1 cup flour
- 1 Tbls. poultry seasoning
- 1 tsp. lemon pepper
- 6 cups cornflakes cereal, coarsely crushed
- 4 egg whites
- Vegetable cooking spray
