Preheat the oven to 350. Heat 2 Tablespoons of the olive oil in a large skillet set over medium heat

- 2-3 cups cubed french bread (about 1/2 inch cubes)
- 2 1/2 lbs chopped tomatoes, seeds and pulp removed from about half
- 3 cloves garlic, minced
- 1 tbsp sugar
- 2 tsp kosher salt
- 1 tsp fresh ground pepper
- 1/2 cup fresh basil leaves, julienned
- 1 cup fresh grated parmesan cheese

Preheat oven to 400. Pierce the potatoes in several places with a fork and rub with olive oil
- 4 large russet potatoes (about 3 lbs) scrubbed well
