pasta with cauliflower, walnuts and feta

Put a large pot of water on to boil
- 2 heads cauliflower
- 1 medium onion
- 4 cloves garlic
- 1 pound whole-wheat pasta
- Extra-virgin olive oil
- Salt and pepper
- 1 pinch red pepper flakes
- White wine vinegar
- 1/2 lemon
- 1/2 cup toasted walnuts
- 4 ounces ricotta salata or feta cheese
Couscous Salad With Grapes and Feta

1. In a bowl, combine the couscous with ½ cup hot water; cover and let sit for 10 minutes
- 1/2 * 1/2 cup couscous
- 1/2 * 1/2 cup chopped toasted walnuts
- 1/2 * 1/2 cup crumbled Feta (2 ounces)
- 1/2 * 1/2 cup halved red seedless grapes
- 1/4 * 1/4 cup chopped parsley
- 3 * 3 tablespoons olive oil
- 2 * 2 tablespoons fresh lemon juice
- * kosher salt and black pepper
- * pita bread, for serving
Grilled Chicken with Arugula Pesto

Heat a grill pan to high. Toast the nuts lightly in small skillet over low heat, then add them to a food processor
- # 1/4 cup sliced or slivered almonds or shelled pistachios
- # 1 cup packed fresh arugula leaves
- # 1/2 cup packed fresh basil leaves

Easy Champagne Vinegar Red Potato Salad

Heat a large pot of fresh cold water to boil
- 1 bag of ripe and firm Red Bliss potatoes - about two pounds
- 1 medium red onion
- Organic extra virgin olive oil
- Champagne vinegar
- Sea salt and fresh cracked pepper
- Tarragon - fresh, snipped, or dried
Massaged Kale Salad

In large serving bowl, add the kale, half of lemon juice, a drizzle of oil and a little kosher salt
- 1 bunch kale (black kale is especially good), stalks removed and discarded, leaves thinly sliced
- 1 lemon, juiced
- 1/4 cup extra-virgin olive oil, plus extra for drizzling
- Kosher salt
- 2 teaspoons honey
- Freshly ground black pepper
- 1 mango, diced small (about 1 cup)
- Small handful toasted pepitas (pumpkin seeds), about 2 rounded tablespoons
Whole Wheat Penne w/ No-Cook Tomato Sauce & White Beans

Cook penne according to package
- 1 lb. of whole wheat penne pasta
- 4 Beef Steak tomatoes
- 2-3 cloves of garlic
- 1-15oz. can of white beans, rinsed and drained
- 2 tbsp extra virgin olive oil
- ½ cup chopped basil
- Salt and Pepper to taste
- Garnish: Parmesan Cheese

Combine nuts and pitted dates in food processor until well ground, but not smooth (about 45 seconds for me)
- 2 ½ cups walnuts (I used about 1 ¾ cups walnuts, ¾ cup almonds)
- 1 ½ cups dates (don’t forget to buy pitted dates or remove them yourself, which only takes a few minutes and saves money)
- 5 cups fresh or frozen berries (or any fruit)
- 2 tbsp raw honey
- 1 ½ tbsp arrowroot
- 2 tbsp water, or juice from frozen berries
- 1-2 tbsp fresh lemon juice

Crumble the feta into a bowl
- 1/2 pound feta (cow’s milk)
- 2/3 cup sundried tomatoes in oil
- 1/2 cup pitted Kalamata olives
- 2 tablespoons fresh dill
- 3 tablespoons flat-leaf parsley
- 2 scallions
- 1/4 cup olive oil

Begin by making the sauce: Warm the oil in a medium saucepan over medium heat, until it shimmers
- sauce:
- 2 tablespoons vegetable oil
- 1 tablespoon minced ginger
- 2 cloves garlic, minced
- 1/2 serrano chile, seeded and finely minced (save the other half for the turkey)
- 1 teaspoon garam masala
- 1/2 teaspoon paprika
- 1 (15-ounce) can tomato sauce
- 1 cup water
- Turkey:
- 3 to 4 tablespoons vegetable oil
- Small handful shelled pistachios, about 1/4 cup
- Small handful raisins, about 1/4 cup
- 1 teaspoon cumin seeds
- 1/2 large white onion, finely diced
- 1 red bell pepper, seeds and membrane removed, finely diced
- 1/2 serrano chile, seeds intact (don't chop it up unless you like things spicy!)
- Kosher salt
- 1 pound ground turkey
- 1/2 teaspoon honey
- 1/4 cup half-and-half
- Small handful chopped fresh cilantro (soft stems included)
- 4 to 6 hamburger buns
