Black Quinoa Salad with Mango, Avocado, & Tomatoes

1. First, using a strainer, rinse the black quinoa under cold water
- 1 cup uncooked black quinoa
- 2 cups water
- Pinch of salt
- 1 large mango, diced
- 2 large tomatoes, diced
- 3 green onions, sliced
- 1/2 cup chopped cilantro
- 2 medium avocados, diced
- 1/4 cup fresh lime juice
- 1 tablespoon olive oil
- 1/2 teaspoon cumin
- Salt and pepper, to taste
Spaghetti Pie

1. Preheat oven to 350 degrees
- 8 oz Spaghetti, cooked (about 1/2 a package)
- 2 Large Eggs, whisked
- 1/2 Cup Parmesan Cheese, divided
- 1 Lb Ground Turkey (you could also use ground beef or chicken)
- 2 Tbsp Olive Oil
- 1/2 Tsp Salt
- 1/2 Tsp Garlic Powder
- 1/2 Tsp Onion Powder
- 2 Cups Weelicious Tomato Sauce or 1 16 Oz Jar Marinara Sauce
- 1 Cup Ricotta Cheese
- 1/2 Tsp Italian Herbs
- 1 Cup Mozzarella Cheese, grated

Mix everything and eat immediately
- 2 cups diced (1/4 inch) cantaloupe (from a 2 1/4-lb piece)
- 1/4 cup diced (1/4 inch) sweet onion (such as Vidalia) or red onion
- 2 tablespoons chopped fresh basil or cilantro
- 1 (2-inch-long) fresh hot red or green chile (skip the seeds if you want to dim the heat), minced
- 2 tablespoons fresh lime juice
- 1/4 teaspoon salt
southwestern pulled brisket

Season the beef generously with salt and pepper, to taste
- 3 pounds beef brisket
- Kosher salt
- Freshly ground black pepper
- 2 tablespoons vegetable oil
- 5 cloves garlic, peeled and smashed
- 1 Spanish onion, halved and thinly sliced
- 1 tablespoon chili powder
- 2 teaspoons ground coriander
- 2 teaspoons ground cumin
- 1/4 cup apple cider vinegar
- 1 1/2 cups water
- 1 (14 1/2-ounce) can whole peeled tomatoes, with their juices
- 1 to 2 whole canned chipotle chiles en adobo [Read: 1 or 2 from a can, not one or two cans, m'kay? Many misread this amount!] (I used one pepper; two will give it a real kick)
- 2 bay leaves
- 1/4 cup molasses

1. Bring a large pot of lightly salted water to a boil
- Whole Wheat Spaghetti (I used 1/2 package)
- Hot Dogs (I used Veggie Smart Dogs)
- Tomato sauce
Baked Banana Nut Oatmeal

Preheat the oven to 375 degrees
- 5 cups water
- 3 cups rolled oats (not instant)
- pinch of salt
- 1 cup lowfat or nonfat milk
- 1 egg (or 2 egg whites)
- 3 ripe bananas
- 3 to 4 tablespoons brown sugar
- handful of chopped pecans
- handful of raisins
Caramel Apple Cider

Begin by pouring 8 C of apple cider into a large stock pot on the stove pot
- 1/2 gallon apple cider (64 oz or 8 C)
- 1/2 C orange juice, fresh squeezed or good quality bottled like Simply Orange
- 1 orange
- 8 cloves
- 2 cinnamon sticks (if yours are more than a year old- buy new ones!!)
- 1/4 t ground allspice
- 1/3 C jarred caramel sauce* more to taste if needed
- optional: caramel flavored syrup
- sweetened whipped cream (or from a can is fine!)
- *For a delicious twist, substitute maple syrup for the caramel sauce in this recipe.
Avocado & Cheese Quesadilla

1. Place a tortilla in a large saute pan over medium-high heat
- 1 Small Avocado, cut into thin slices
- 1/2 Cup Cheese, shredded (I used a 3 cheese blend of monterey jack, cheddar and mozzarella)
- 2 Whole Wheat or Spelt Tortillas

Roll pancetta in half. Place basil leaf and peach on one end and wrap pancetta around peach
- 2 * 2 ripe peaches, sliced into wedges
- * a few basil leaves, torn into about 12 pieces

Fig and Mozzarella Warm Sandwich

- 4 - 4 small loaves of bread (about 60 g each)
- - a ball of buffalo mozzarella
- 3 - 3 ripe figs

- 4 - 4 tsp of thick pesto (a little less if very oily), such as this pesto de roquette
