Penne Arrabiata with Brown Rice Pasta

- 14 oz. gluten-free penne pasta, such as Tinkyada Brown Rice Penne
- 4-6 tablespoons extra virgin olive oil
- 1 medium onion, diced
- 4-6 cloves fresh garlic, minced
- 1 pint Roma tomatoes, diced- or 1 14.5 oz. can Muir Glen organic fire roasted diced tomatoes with spicy chiles
- 2-4 oz. chopped roasted green or red chiles- hot or mild, according to taste
- Hot red chile pepper flakes, to taste
- Sea salt and fresh ground pepper, to taste
- A goodly splash or two of balsamic vinegar
- 4 tablespoons shredded Parmesan or vegan cheese, or omit for dairy-free
- 4 tablespoons chopped fresh parsley
Zucchini Polenta Tart

Cook the polenta according to package directions, until it gets to a rather thick texture
- 2.2 - 2.2 pounds zucchini
- 1 1/2 - 1 1/2 cups cornmeal (not precooked, preferably stone-ground, possibly with dried mushrooms)
- 1/2 - 1/2 cup freshly grated parmesan

- - herbes de Provence (or a mix of dried thyme, basil, oregano, and rosemary)

Combine nuts and pitted dates in food processor until well ground, but not smooth (about 45 seconds for me)
- 2 ½ cups walnuts (I used about 1 ¾ cups walnuts, ¾ cup almonds)
- 1 ½ cups dates (don’t forget to buy pitted dates or remove them yourself, which only takes a few minutes and saves money)
- 5 cups fresh or frozen berries (or any fruit)
- 2 tbsp raw honey
- 1 ½ tbsp arrowroot
- 2 tbsp water, or juice from frozen berries
- 1-2 tbsp fresh lemon juice
Baked Apple Donuts

Preheat the oven to 400 degrees
- 1 cup all-purpose flour
- 3/4 teaspoon baking powder
- 3/4 teaspoon baking soda
- pinch of salt
- 1 egg (lightly beaten)
- 1 6 oz container of non fat vanilla yogurt
- 1 tablespoon canola oil
- 2 teaspoons lemon juice
- 1 to 2 tablespoons honey
- 1 apple (diced small)
- 1 teaspoon cinnamon
- 2 tablespoons sugar
- powdered sugar for dusting

Whisk lime juice, oil, cilantro, sugar, cumin, salt and pepper in a large serving bowl

Bring a large pot of salted water to a boil and prepare a small ice water bath
- 1 pound of small pasta (I used shells because I imagined the peas would nest in there and gah, such cuteness)
- 1/4 pound snow pea pods, ends trimmed
- 1/2 pound fresh summer peas, which yielded about 1 cup once shelled
- 3/4 to 1 cup Roasted Red Pepper Vinaigrette (recipe below)
- Roasted Red Pepper Vinaigrette
- 1 red bell pepper, roasted, skinned and seeded or the equivalent from a jar, drained
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar (and up to 2 tablespoons more if you, like us, like that extra bite in your dressing)
- 1 tablespoon chopped shallot (about 1 small)
- 1/2 teaspoon salt
- Several grinds of black pepper
Strawberry Salsa with Sugared Wonton Crisps

In a medium bowl stir together salsa ingredients
- strawberry salsa
- 1 quart strawberries, chopped
- 1 small jalapeño chili, minced
- 1 T chopped fresh cilantro
- juice of 1/2 lime
- 1/4 t salt
- 1 t sugar (omit sugar for savory salsa)
- sugared wontons
- 15 wonton wrapper
- 2 T butter, melted
- 2 t sugar
- 1/2 t ground cloves (or cinnamon)
Roast Cherry Tomatoes with Olives & Bowties

1. Preheat oven to 400 degrees
- 1 Pint Cherry Tomatoes
- 1 Tbsp Olive Oil
- 1 Tsp Fresh Thyme, chopped or 1/4 Dried Thyme
- 1 Clove Garlic, minced
- 1/2 Tsp Salt
- 1/3 Cup Kalamata olives, pitted and halved
- 8 oz Farfalle (Bowtie) Pasta (about 1/2 a bag or box)
- 1/4 Cup Parmesan Cheese
Pan Seared Chicken w/ Balsamic Strawberries and Feta Cheese

In a small bowl combine the strawberries and balsamic glaze
- 1 lb of thinly sliced, boneless, skinless chicken breast
- 1 heaping cup of chopped strawberries
- 2 tablespoons of basil
- 1 tbsp of mint
- 3 tbsp of feta cheese
- 1 tsp of balsamic glaze
- 2 tsp of olive oil

- 1 cup seeded, chopped fresh heirloom tomatoes- I used yellow and pink
- 4 oz. chopped roasted green chiles
- 1 quart light vegetable broth
- 1 14-oz can coconut milk
- 2 rounded cups torn cooked chicken pieces
- Sea salt and ground pepper, to taste
- A quick drizzle of organic raw agave, to taste
