Pumpkin Enchilada Sauce

1. Combine all ingredients in a food processor and pulse until well mixed
- 1 can pumpkin puree, about 2 cups
- 1 cup water
- 1 cup vegetable or chicken broth
- canned chipotles, plus some adobo sauce
- 1/2 tsp cumin
- 1/2 tsp coriander
- dash cinnamon
- salt and pepper

heat olive oil in medium pan over medium heat
- 1 tbs olive oil
- 6 0z sliced portabellas
- 1 red bell pepper, cored and thinly sliced
- 1 green bell pepper, cored and thinly sliced
- 1 large onion thinly sliced
- 1 tbs minced garlic
- 1 tsp ground corriander
- 1 tsp ground cumin
- 1 tsp black pepper
- 1 tsp salt
- 12 corn or flour tortillas
Black Bean and Sweet Potato Soup Recipe

1. In a large soup pot, heat the olive oil
- 1 T olive oil
- 1 red onion, chopped
- 3 cloves garlic, minced
- 1 large sweet potato, peeled and chopped
- 1 roasted red pepper, chopped (you can use jarred)
- 2 cans low sodium vegetable broth (15 oz. size)
- 2 cups water
- 3 cans low sodium black beans, rinsed and drained
- 3 cans diced tomatoes with green chiles
- 1 T chili powder
- 2 teaspoons cumin
- Dash of red pepper flakes
- 1/2 bunch of cilantro, chopped
- Salt and pepper, to taste
Asiago Sweet Potatoes

Preheat oven to 400F. In a casserole dish, drizzle 2 T olive oil, and sprinkle 1 T thyme
- 4 T olive oil
- 2 T fresh thyme leaves
- 2 medium sweet potatoes (or 1 1/2 large), sliced thin
- 2 small onions, sliced thin
- 2 c grated Asiago cheese
Pumpkin Pancakes with Cinnamon Syrup

Mix first 9 ingredients in large bowl to blend
- 1 cup all purpose flour
- 1 cup whole wheat flour
- 6 tablespoons (packed) brown sugar
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- Dash of ground cloves
- Dash of nutmeg
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1 2/3 cups buttermilk
- 3/4 cup canned solid pack pumpkin
- 3 large eggs
- 1 teaspoon vanilla
- 2 tablespoons (1/4 stick) butter, melted
Oatmeal Pancakes

Whisk the dry ingredients (oat flour, flour, sugar, baking powder and salt) together in a large bowl
- 3/4 cup oat flour (you can make this by pulsing rolled oats into a food processor or spice grinder until finely ground; 1 cup of oats yielded 3/4 cup oat flour for me)
- 1 cup all-purpose flour
- 2 tablespoons sugar
- 2 teaspoon baking powder
- 3/4 teaspoon Kosher or coarse salt
- 3 tablespoons unsalted butter, melted and cooled slightly (plus extra for the pan)
- 1 1/4 cups whole milk
- 1 cup cooked oatmeal*
- 1 tablespoon unsulphured (not blackstrap) molasses or 1 tablespoon honey
- 2 large eggs
Whole Wheat Pasta with Summer Squash & Toasted Hazelnuts

In a large pot of boiling salted water, cook pasta until al dente
- 10 oz whole-wheat pasta
- 3 T olive oil
- 1 medium shallot, finely chopped
- 1 large zucchini, diced
- 1 large yellow squash, diced (or 2 pattypan)
- juice of 1/2 lemon
- 2 t salt
- 1 t black pepper
- 1/2 c toasted chopped hazelnuts, skins rubbed off (or pine nuts)
- 1/2 c chopped fresh parsley
- 1/2 c chopped fresh basil
- parmesan cheese, shaved, to taste

Combine nuts and pitted dates in food processor until well ground, but not smooth (about 45 seconds for me)
- 2 ½ cups walnuts (I used about 1 ¾ cups walnuts, ¾ cup almonds)
- 1 ½ cups dates (don’t forget to buy pitted dates or remove them yourself, which only takes a few minutes and saves money)
- 5 cups fresh or frozen berries (or any fruit)
- 2 tbsp raw honey
- 1 ½ tbsp arrowroot
- 2 tbsp water, or juice from frozen berries
- 1-2 tbsp fresh lemon juice

- 2 tsp of extra virgin olive oil
- A sprinkle of Parmesan cheese
- Salt and Pepper to taste
