Leek and Potato Soup

Trim the leeks, keeping about 6 cm (2 1/2 inches) of the green part
- 2.2 -2.2 poundsleeks, preferably organic, the thinner the better
- 1 -1 pound potatoes (Monalisa, Bintje, Yukon gold), smooth and firm, about 4 medium
- 1/2 to 1 -1/2 to 1 teaspoon fine sea salt
- - Freshly ground pepper
- - Crème fraîche, for serving (optional)
Multigrain Blueberry Muffins

Preheat oven at 400 degrees
- 2 cups TJ Multigrain Pancake Mix
- 2 eggs lightly beaten
- 1 cup applesauce
- 3 tablespoons canola oil
- 1/2 cup sugar
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1 cup frozen blueberries barely thawed
Bruschetta

Halve the tomatoes, remove the seeds and the juice, and cut them in small dice
- 12 - 12'' section of baguette
- two - two large tomatoes
- one - one small onion
- - a handful of fresh basil
- three - three cloves of garlic
- 1/3 - 1/3 C grated or crumbled cheese (I used parmesan on half the pieces, and a herbed sheep's milk cheese on the other)
- - olive oil
- - salt, pepper, piment d'espelette (substitute red pepper flakes)
Israeli Couscous with Apples, Cranberries and Herbs

For the couscous: In a medium saucepan, heat the olive oil on medium-high heat
- Couscous:
- 2 * 2 tablespoons olive oil
- 2 * 2 cups Israeli couscous (or barley or orzo)
- 4 * 4 cups low-sodium chicken broth
- 1/4 * 1/4 cup chopped fresh flat-leaf parsley
- 1 1/2 * 1 1/2 tablespoons chopped fresh rosemary leaves
- 1 * 1 teaspoon chopped fresh thyme leaves
- 1 * 1 medium green apple, diced
- 1 * 1 cup dried cranberries
- 1/2 * 1/2 cup slivered almonds, toasted, see Cook's Note
- Vinaigrette:
- 1/4 * 1/4 cup apple cider vinegar
- 2 * 2 tablespoons maple syrup
- 1 * 1 tablespoon kosher salt
- 1/2 * 1/2 teaspoon freshly ground black pepper
- 1/4 * 1/4 cup olive oil

Strawberry Granola Squares

Preheat oven to 350F. On a baking sheet, combine the oats, nuts and wheat germ
- 3 c old-fashioned oats
- 2 c slivered almonds
- 1/4 c wheat germ (or flax seed)
- 1 t orange peel
- 1 c brown rice syrup
- 1/4 c honey
- 1 t vanilla
- 1 t salt
- 2 c chopped strawberries, excess liquid drained*
- additional add-in ideas: 2 T seeds (sesame, sunflower…); shaved dark chocolate

1. Preheat oven to 350 degrees
- Peanut Butter & Jelly Breakfast Cupcakes
- 1 1/4 Cup All Purpose Flour
- 2 Tsp Baking Powder
- 1/2 Tsp Salt
- 1/4 Cup Peanut Butter (you can also use almond, cashew, or sunflower butter)
- 1 Large Egg
- 2 Tbsps Sugar
- 1 1/4 Cup Milk (low fat or whole)
Pizza Muffins

Bring dough to room temperature and preheat oven to 450 degrees
- 1 Lb Package Pizza Dough (white or Whole Wee-Eat Pizza Dough)
- 1 Cup Mozzarella Cheese, shredded
- 1/2 Cup Pizza Sauce
- Olive Oil
- Toppings: Mushrooms, Ham, Red Peppers, Olives or whatever you and your kids love. The possibilities are endless.
Chewy Lime and Coconut Sugar Cookie Recipe

1. Preheat oven to 350 degrees
- 2 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup butter, softened
- 1 1/2 cups white sugar

- Zest of one large lime
