Leek and Potato Soup

- 1 package (2 sheets) frozen puff pastry, thawed
- 1 1/2 cups apple pie filling, coarsely chopped

Seven Layer Magic Cookie Bars

HEAT oven 350°F. Spray 13 x 9-inch baking pan with no-stick cooking spray
- Crisco® Original No-Stick Cooking Spray
- 1 1/2 cups graham cracker crumbs
- 1/2 cup butter, melted
- 1 (14 oz.) can Eagle Brand® Sweetened Condensed Milk
- 1 cup (6 oz.) butterscotch-flavored chips
- 1 cup (6 oz. pkg.) semi-sweet chocolate chips

Light Fluffy Pancakes

Heat a large non-stick skillet or griddle over low heat while preparing ingredients
- 1 cup all-purpose bleached flour (which is softer than unbleached flour)
- 2 tsps. sugar
- 1/2 tsp. salt
- 1/2 tsp. baking powder
- 1/4 tsp. baking soda
- 3/4 cup buttermilk
- 1/4 cup milk
- 1 large egg
- 2 Tbs. unsalted butter, melted

Southwest Bean Potpie

1. To make the crust, bring the water to a boil
- Cornmeal Crust
- 3 cups water
- 1/4 teaspoon salt
- 2/3 cup yellow cornmeal
- 1 tablespoon butter or margarine
- 2 tablespoons Parmesan cheese
- 1 teaspoon dried parsley flakes
- Filling
- 1 tablespoon vegetable oil
- 1 cup sliced onions
- 2 cloves garlic, minced
- 2 cups cooked black beans
- 1 cup corn kernels
- 1 1/2 cup whole tomatoes, with liquid (14.5 ounce can)
- 2/3 cup tomato paste
- 1 teaspoon oregano
- 1/2 teaspoon salt
- 1/8 teaspoon ground black pepper

- 5 small carrots (about 1 pound), peeled and cut into 1/2-inch pieces

- 1 small yellow, orange, red or green bell pepper, chopped (1/2 cup)
- 2 medium green onions, sliced (2 tablespoons)

- 1 cup frozen baby lima beans
- 1/4 cup half-and-half
- 2 tablespoons chopped fresh marjoram leaves or 1/2 teaspoon dried marjoram leaves
