Pumpkin Pie Bars

In a large mixing bowl, beat together butter and sugar until creamy
- 2/3 cup butter (or margarine)
- 1 cup sugar
- 1 3/4 cups flour
- 1 1/2 cups pecans (finely chopped)
- 16 ounces canned pumpkin
- 14 ounces canned condensed milk
- 1/4 cup molasses (dark or light)
- 2 eggs (beaten)
- 2 teaspoons pumpkin pie spice
- 2 teaspoons vanilla
Velveeta Fudge

- 3/4 pound Velveeta (block or slices, cubed)

Maine Whoopie Pies

Preheat oven to 350 degrees
- Cakes-In a large bowl, cream together 1/2 cup vegetable shortening, 1 cups sugar and 1 egg. Add 1 cup butter milk, 2 cups sifted flour, 1/2 cup sifted unsweetened cocoa, and 1 tsp salt. Mix well.
- Add 1/2 cup water and 1 tsp. baking soda and mix until smooth.
- Filling-Mix 3 1/2 cups confectioner's sugar, 2 tbsp. flour, 1 tsp. vanilla, 1 1/2 tsp. lemon juice, 1/4 cup milk, 1/2 cup vegetable shortening on low speed until blended.

- ¾ cup water
- 1 tbsp olive oil
- 1 tbsp chopped fresh oregano
- 1 Garlic clove, chopped
- 1 lb. string beans, trimmed and cut into 2 inch lengths
- Seasoned salt
- Ground black pepper
- Crushed red pepper flakes
- ½ cup shredded Mozzarella cheese
- ½ cup shredded Provolone cheese
Greens With Poblano-Buttermilk Dressing and Cornbread Croutons

For the dressing, place all the dressing ingredients into a blender and puree
- For dressing:
- 1 poblano chile, roasted, peeled and seeded
- 1/4 cup buttermilk
- 1/4 cup mayonnaise
- 1 tablespoon chopped green onion
- 1 clove garlic, chopped
- 1 teaspoon freshly squeezed lime juice
- 1 teaspoon finely chopped cilantro
- Salt and freshly ground black pepper to taste
- For croutons:
- 1/2 loaf green-chile cornbread, cut into 1/2-inch cubes (see recipe)
- For salad:
