Zucchini Loaf

In bowl combine flour, baking soda, salt, baking powder, cinnanon and nuts
- 3 cups flour
- 2 tsp. baking soda
- 1 tsp. salt
- 1/2 tsp. baking powder
- 1 1/2 tsp. cinnanon
- 3/4 cup chopped nuts
- 1 tsp. vanilla
- 3 eggs
- 2 cups sugar
- 1 cup oil OR margarine
- 2 cups coarsely-shredded zucchini (skin left on)
- 1 8-oz. can crushed pineapple, drained
Curried Carrot Soup

Heat oil in pot and saute onion, carrot and celery until soft
- 6 oz. chopped onion
- 5 1/2 oz. shredded carrot
- 2 tsp. olive oil
- 900 ml. chicken stock
- 1 cup milk, 1%
- 1 tsp. curry powder
- 4 1/2 oz. chopped celery
- Salt and pepper to taste
Off Beat Balls

Heat caramels and milk in the top of a double boiler until the caramels are melted
- 20 caramels
- 2 tbsp. milk
- 1 tbsp. butter
- 3 cups crunchy cereal
- 1 cup nuts
Pineapple Snow

- 1 ripe fresh pineapple
- 1 tsp. sherry
- 2 cups heavy cream

- 1 14-oz. tin cherries
- 6 tbsp. sugar

- 1 cup + 2 tbsp. juice and water combined

- 1 1/4 cups graham wafer crumbs
- 3 tbsp. sugar
- 1/3 cup margarine
- 2 8-oz. packages cream cheese, softened
- 4 cups milk
- 2 packages (4-serving size) lemon instant pudding
Vanilla Pudding

- 1/2 cup sugar
- 2 tbsp. cornstarch
- 1/2 tsp. salt
- 2 cups milk
- 2 egg yolks, beaten
- 2 tsp. butter
