Ingredients

  • 12

    cups zucchini - grated

  • 4

    large onions, chopped

  • 2

    green peppers, chopped

  • 2

    red peppers, chopped

  • Sprinkle with ⅓ cup pickling salt and leave overnight.

  • Rinse and drain well.

  • IN SEPARATE POT BOIL:

  • 3

    cups white vinegar

  • 4

    cups white sugar

  • 2

    tsps celery salt

  • 2

    tsps mustard seed

  • 2

    tsps Tumeric

  • 5

    tbsps cornstarch

  • Add to relish. Bring to boil and boil altogether for 20 minutes until transparent.

Directions

Pour into jar and steam.
