Chicken Enchiladas

Coat large saute pan with oil
- 3 tablespoons vegetable oil
- 1 1/2 pounds skinless boneless chicken breast
- Salt and pepper
- 2 teaspoons cumin powder
- 2 teaspoons garlic powder
- 1 teaspoon Mexican Spice Blend
- 1 red onion, chopped
- 2 cloves garlic, minced
- 1 cup frozen corn, thawed
- 5 canned whole green chiles, seeded and coarsely chopped
- 4 canned chipotle chiles, seeded and minced
- 1 (28-ounce) can stewed tomatoes
- 1/2 teaspoon all-purpose flour
- 16 corn tortillas
- 1 1/2 cups enchilada sauce, canned
- 1 cup shredded Cheddar and Jack cheeses
- Garnish: chopped cilantro leaves, chopped scallions, sour cream, chopped tomatoes
Meatball Marinara Grilled Cheese {recipe}

Spread both slice of bread with garlic butter
- 2 slices of sturdy bread
- 2 tablespoons softened butter mixed with 1 teaspoon very finely minced garlic
- 1/2 cup shredded mozzarella cheese (or more)
- 1 large meatball, carefully sliced into about 4 or 5 rounds, warmed (find a meatball recipe here, even vegetarian!)
- 1/4 cup toamto/marinara sauce, warmed (this is our simple tomato sauce recipe here)
- 2 tablespoons grated parmesan cheese
- fresh basil, chiffonade
- salt and pepper to taste
- 2 tablespoon olive oil
Peanut Butter Pretzel Bites

Combine peanut butter and softened butter in a large bowl with a fork or whisk, or in a stand mixer

- 2 tbsp softened butter
- 1/2 cup powdered sugar (maybe more)

Pork Tenderloin with Mushroom Pan Sauce

- 1 lb (500 g) pork tenderloin
