Prepare potatoes and cut into bite size chunks
- 10 medium potatoes
- 1 cup mayo
- 2 tbsp. red wine vinegar
- 2 tbsp. dijon mustard
- 3 celery ribs, diced
- 1 tsp. horseradish
- 2 tsp. sugar
- 1 tsp. salt
- 3 green onions, chopped
- 1/4 red onion, chopped
Coq Au Vin

Preheat the oven to 250 degrees F
- 4 ounces good bacon or pancetta, diced
- 1 (3 to 4-pound) chicken, cut in 8ths
- Kosher salt and freshly ground black pepper
- 1/2 pound carrots, cut diagonally in 1-inch pieces
- 1 yellow onion, sliced
- 1 teaspoon chopped garlic
- 1/4 cup Cognac or good brandy

Golden Mashed Potatoes with Leeks and Sour Cream

Whats the secret to smooth, velvety mashed potatoes? Start with the potato
- 4 lb. large Yukon Gold potatoes, unpeeled
- and preferably organic, scrubbed
- 8 Tbs. (1 stick) unsalted butter
- 4 leeks, white and light green portions,
- finely chopped and rinsed well
- 1 cup sour cream, at room temperature
- 1 cup milk, heated to a simmer

- 2 pounds beef stew meat, cut into 1-inch cubes
- 1 medium onion, diced

- 3 cups beef stock
- One 12-ounce can beer
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
