In a medium bowl, toss the cucumbers, onion, vinegar, 1 tablespoon of the sugar and 1 teaspoon of salt
- Ginger-Lemon Mayonnaise:
- 2 Kirby cucumbers, thinly sliced
- 1/4 medium red onion, thinly sliced
- 3 tablespoons rice vinegar
- 1 tablespoon plus 1 teaspoon sugar
- Kosher salt and freshly ground pepper
- 2 teaspoons finely grated fresh ginger
- 1 garlic clove, smashed
- 1 Thai or serrano chile, seeded and minced
- 2 tablespoons Asian fish sauce
- 2 tablespoons finely chopped cilantro
- 1 tablespoon finely chopped basil
- 1 1/2 pounds sushi-quality tuna
- 1 1/2 tablespoons vegetable oil
- 1 1/2 teaspoons Asian sesame oil
- 4 hamburger buns
- 1 cup mayonnaise
- 2 tablespoons soy sauce
- 2 tablespoons finely chopped cilantro
- 2 tablespoons finely chopped scallion greens
- 1 tablespoon black sesame seeds or toasted sesame seeds
- 2 teaspoons finely grated fresh ginger
- Finely grated zest of 1 lemon

Roasted Balsamic-Glazed Chicken

- 1/4 cup balsamic vinegar
- 1/4 cup extra-virgin olive oil

Cilantro Yogurt: Whisk together all ingredients in a small bowl
- Cilantro Yogurt:
- 1 cup greek yogurt
- Juice of 1/2 lime
- 3 tablespoons finely chopped fresh cilantro
- Salt and freshly ground black pepper

- 2 tablespoons canola oil
- 1 small red onion, finely diced
- 1 clove garlic, finely chopped
- 1 teaspoon ground allspice
- 1/2 teaspoon ground clove
- 2 cups canned plum tomatoes, drained and squeezed
- 1/4 cup ketchup
- 1/2 habanero, chopped
- 2 tablespoons molasses
- 2 tablespoons balsamic vinegar
- 1 tablespoon honey
- Salt and freshly ground black pepper
- Quesadilla:
- 20 thin stalks asparagus, trimmed
- 4 tablespoons canola oil
- Salt and freshly ground black pepper
- Twelve 6-inch flour tortillas
- 3/4 cup grated Monterey Jack cheese

Pretzel-Crusted Pork Schnitzel

Bring apple cider, brown sugar, and 1 Tbsp
- 4 cups apple cider
- 1 tablespoon light brown sugar
- 1 tablespoon kosher salt, plus more
- 4 4-oz. boneless pork chops or cutlets, pounded to 1/8” thickness
- 6 oz. pretzels
- 4 large eggs, beaten to blend
- 1/3 cup whole grain mustard
- 3/4 cup all-purpose flour
- Freshly ground black pepper
- Vegetable oil (for frying; about 3 cups)
- Flaky sea salt (such as Maldon)

- 6 slices of streaky bacon
- 6 heaped tbsp brown sugar
- 250 ml cream
- 250 g dark chocolate
- 25 ml bourbon
- 100 g cocoa
Italian Mac & Cheese

Bring a large pot of water to a boil
- 1 pound ziti rigate or penne rigate
- 1 pound Italian bulk sweet sausage
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon butter
- 3 or 4 cloves garlic, chopped
- Salt and pepper
- 2 tablespoons all-purpose flour
- 1 cup chicken stock
- 1 cup heavy cream
- 2 1/2 cups, shredded Italian 4 cheese blend
- 1 can diced tomatoes, drained well
- 1 can artichoke hearts, drained and chopped
- 1 teaspoon Tabasco or Texas Champagne
- 1/2 cup Parmesan, a couple of handfuls

- 2 carrots, coarsely shredded
- 1/4 cup unseasoned rice vinegar
- 1 tablespoon sugar
- 1/2 cup mayonnaise
- 2 tablespoons Rooster Sauce
- 2 teaspoons tomato paste
- 1 garlic clove, minced
- Kosher salt and freshly ground pepper
- 1 1/2 pounds ground beef chuck
- 1 1/2 teaspoons curry powder
- 2 tablespoons vegetable oil
- 2 tablespoons unsalted butter, softened
- One 24-inch baguette, quartered crosswise and split
- 2 pickled jalapeños, thinly sliced
- 12 cilantro sprigs
Chicken & Spring Vegetable Pot Pies

In a sauté pan over medium-high heat, melt 2 Tbs
- 4 Tbs. (1/2 stick) unsalted butter
- 2 oz. leek, white portion only, thinly sliced
- 1/2 small yellow onion, cut into small dice
- 1 celery stalk, cut into small dice
- 1 carrot, cut into small dice
- 3 asparagus spears, cut into 1/2-inch pieces
- 3 Tbs. all-purpose flour
- 2 Tbs. dry sherry
- 2 tsp. chicken demi-glace
- 1 1/4 cups chicken stock
- 1/2 tsp. chopped fresh thyme
- 1 cup cubed cooked chicken
- 1/3 cup shelled fresh peas
- 5 oz. baby spinach
- Kosher salt and freshly ground pepper, to taste
- 2 batches basic pie dough, shaped into 2 disks and chilled (see related recipe)
- 2 sheets puff pastry, each 9 1/2 inches square, thawed but chilled
- 1 egg, beaten with 1 tsp. water
