Simmer the cream in an uncovered stock pot until it is reduced by half
- 2 quarts heavy cream
- 2 teaspoons salt
- 2 teaspoons white pepper
- 1/2 cup granulated sugar
- 1 tablespoon nutmeg
- 3 to 5 pounds corn, fresh or frozen
- 1 leek, finely diced
- Fresh parsley, chopped
Roasted Salmon with Lentils and Bacon

In a medium saucepan, cook the bacon until browned
- 4 strips bacon, cut crosswise into 1/2-inch pieces
- 1 small onion, cut into 1/2-inch slices

- 1 clove garlic, minced
- 1 1/4 cups lentils

Cast-Iron-Grilled Romano Beans with Garlic Aioli

- AIOLI:
- 1 small head of garlic, halved lengthwise
- 6 tablespoons extra-virgin olive oil
- Kosher salt

- 1 large egg yolk
- 1/2 teaspoon whole-grain mustard

- 2 tablespoons fresh lemon juice

- 1/2 pound elbow macaroni
- 1 1/2 tablespoons unsalted butter, plus more for brushing
- 1/4 cup freshly grated Parmigiano-Reggiano cheese
- 2 tablespoons all-purpose flour
- 3/4 cup milk
- 4 ounces cheddar cheese, shredded (1 packed cup)
- 4 ounces deli-sliced American cheese, chopped
- 1 large egg yolk
- 1/4 teaspoon smoked Spanish paprika
Thai Chicken with Basil

In a medium bowl, combine the chicken with the fish sauce, soy sauce, water, and sugar
- 1/3 pounds boneless, skinless chicken breasts (about 4), cut into 1-by-2-inch pieces
- 2 tablespoons Asian fish sauce (nam pla or nuoc mam); see Note
- 1 1/2 tablespoons soy sauce
- 1 tablespoon water
- 1 1/2 teaspoons sugar
- 2 tablespoons cooking oil
- 1 large onion, cut into thin slices
- 3 fresh red chiles, seeds and ribs removed, cut into thin slices, or 1/4 teaspoon dried red-pepper flakes
- 3 cloves garlic, minced
- 1 1/2 cups lightly packed basil leaves

- 2 teaspoons dark sesame oil
- 2 oranges, juiced
