LINGUINI WITH BACON & MUSHROOMS

Cut bacon into 1 inch pieces, saute and drain
- 6 slices bacon, chopped
- 1 onion, chopped
- 1 small green bell pepper, cut into strips
- 1/2 lb mushrooms, sliced
- green olives, chopped
- 1/2 cup chopped parsley
- 1 lb linguini
- 1/2 cup unsalted butter, cut into pieces
- 1/2 cup Parmesan cheese
TURNIP WITH VELVEETA CHEESE (Leanne Donovan)

Cook carrot and turnip separately until tender enough to mash
- 1 carrot, peeled and cut into chunks
- 1 medium turnip, peeled and cut into chunks
- Butter to taste
- Salt and pepper to taste
- Velveeta cheese to taste
- Bread crumbs

SNAP PEAS WITH PANCETTA

Bring 2 -3 quarts of water to a boil in a large pot and add 1 T of salt
- 1 pound sugar snap peas, dethreaded and trimmed
- 1/4 pound pancetta, chopped
- 1/2 cup good olive oil
- 1 T freshly squeezed lemon juice
- 2 T Champagne or white wine vinegar
- 1/4 cup minced red onion
- 5 T freshly grated pecorino Romano cheese (or similar)
- 1 /s t freshly ground black pepper

Base: In bowl, combine flour with sugar; with pastry blender, cut in butter until crumbly
- Base:
- 1 cup (250 mL) all-purpose flour
- 1/4 cup (60 mL) granulated sugar
- 1/2 cup (125 mL) butter
- Topping:
- 2 tablespoons (30 mL) butter, melted
- 2 eggs, lightly beaten
- 1 cup (250 mL) packed brown sugar
- 2 tablespoons (30 mL) all-purpose flour
- 1/2 teaspoon (2 mL) baking powder
- 1/2 teaspoon (2 mL) vanilla
- 1 pinch salt
- 1 cup (250 mL) raisins
- 1/2 cup (125 mL) coarsely chopped pecans
ORANGE CRANBERRY BUNDT CAKE

- Cake:
- Nonstick cooking spray
- Grated zest of 1 large orange
- 1 large orange, chopped
- 1 teaspoon (3 mL) almond extract
- 1 cup (250 mL) dried cranberries
- 1/2 cup (125 mL) dried apricots, quartered
- 1 cup (250 mL) granulated sugar
- 1/2 cup (125 mL) butter
- 2 large eggs
- 2 cups (500 mL) pre-sifted flour
- 1 teaspoon (5 mL) baking soda
- 1 teaspoon (5 mL) salt
- 1 cup (250 mL) lemon yogurt
- Citrus Syrup:
- Juice of 1 lemon
- Juice of 1 orange
- 1/4 cup Grand Marnier
- 2 tbsp liquid honey
SHRIMP WITH WASABI MAYONNAISE

Combine all ingredients except shrimp in a food processor; process until smooth
- 1 cup (250 mL) mayonnaise
- 2 tbsp (25 mL) chopped fresh mint
- 2 tbsp (25 mL) fresh lemon juice
- 2 tsp (10mL) wasabi paste
- 1/4 tsp (1 mL) salt
- 1 1/2 lb (0.75 kg) frozen cooked medium shrimp, thawed
KALAMATA OLIVE TAPENADE (Chere)

Pulse all the ingredients, except the olive oil, only until still fairly coarse
- 1 cup pitted Kalamata olives
- 4 anchovy fillets, rinsed and patted dry
- 2 tbsp capers
- 3-4 tbsp minced parsley
- 1 clove garlic, minced
- 1 tbsp fresh lemon juice
- 1 tsp lemon zest
- 1/4 cup extra-virgin olive oil

- 1 tsp. minced fresh dill

- 2 bunches small young carrots, preferably with tops (about 2 lb.)
- 8 oz. fresh sugar snap peas, trimmed and strings removed

Preheat grill to high. Place shrimp, corn, butter, garlic and parsley on a large sheet of aluminum foil
- 1 lb fresh or frozen shrimp, uncooked
- 2 cups fresh or frozen corn kernels
- 2 tbsp butter
- 2 cloves garlic, mince
- 1/4 cup onion, chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh basil, chopped
- 2 tomatoes, seeded and diced, or 1 1/2 cups cherry tomatoes, halved
- 200 gms Feta cheese, crumbled
- 1/2 cucumber, diced
