BISQUICK TACO PIE

Heat oven to 400F. Grease square baking dish, 8x8x2"
- 1 lb hamburger
- 1/2 cup chopped onion
- 1 can green chilies
- 2 envelopes taco seasoning mix
- 3/4 cup Bisquick baking mix
- 1 1/4 cups milk
- 3 eggs
- 1 cup shredded Cheddar cheese
- 1/4 head lettuce, shredded
- 1 tomato, diced
- 1/3 cup sliced ripe olives
- Sour cream, optional
FETA & HERB TARTLETS

Crumble the feta cheese into a large bowl
- 6 oz feta cheese
- 1/2 cup ricotta cheese
- 2 tbsp chopped fresh parsley
- 2 tbsp chopped fresh mint
- 1/4 tsp cracked black pepper
- 1 egg, lightly beaten
- 12 oz package frozen puff pastry, thawed according to package directions
- 1/3 cup red pepper jelly

For crust: Position oven rack in bottom third of oven; preheat to 350F
- Pie Crust:
- 1 - 10 " pie crust
- Filling:
- 1 cup packed golden brown sugar
- 2 large eggs
- 1/2 tsp salt
- 1/2 tsp ground cinnamon
- 1/2 tsp ground ginger
- 1/4 tsp ground cloves
- 1 cup canned pure pumpkin
- 1 cup heavy whipping cream
- Topping:
- 1/2 cup pecan pieces, toasted
- 1/4 cup packed golden brown sugar
- 1/2 tsp ground cinnamon
- 2-3 tbsp butter, softened

- 1 red bell pepper, 1" diced
- 1 yellow bell pepper, 1" diced
- 1 red onion, peeled and 1" diced
- 1 garlic clove, minced
- 1/3 cup extra virgin olive oil
- 1 1/2 tsp kosher salt
- 1/2 tsp freshly ground black pepper
- 1/2 lb orzo
- Dressing:
- 1/3 cup freshly squeezed lemon juice (2 lemons)
- 1/3 cup extra virgin olive oil
- 1/2 tsp freshly ground black pepper
- To assemble:
- 4 green onions, white and green parts
- 1/4 cup pine nuts, toasted
- 3/4 lb good feta, 1/2" diced (not crumbled)
- 15 fresh basil leaves, cut into julienne
TARRAGON & BASIL VINAIGRETTE DRESSING

Place all ingredients in a jar and shake well
- 1 cup olive oil
- 1/2 cup white vinegar
- 2 Tbsp minced parsley
- 2 tsp salt
- 2 tsp Dijon mustard
- 2 cloves garlic, crushed
- Freshly ground pepper to taste
- 1/2 tsp tarragon
- 1/2 tsp basil
LEMONADE PIE WITH BLUEBERRY SAUCE

For the crust, combine the graham cracker crumbs, butter and sugar in a food processor
- Crust:
- 2 cups graham cracker crumbs (about 40 graham crackers)
- 6 Tablespoons butter, melted
- 1 Tablespoon sugar
- Lemonade Pie:
- 4 cups vanilla frozen yogurt, slightly thawed
- 1/2 cup lemonade concentrate, thawed
- 1 Tablespoon fresh lemon juice
- Blueberry Sauce:
- 1-1/2 cups fresh blueberries
- 2 Tablespoons sugar
- 1 Tablespoon fresh lemon juice

- 2 cups cubed chicken breast
- 8 cups hot cooked brown rice
- 2 cups grated carrots
