BEEF & BROCCOLI STIR-FRY

Marinate beef for 1 to 2 hours prior to cooking
- 1 1/2 lb broccoli
- 1/2 medium onion, cut into wedges and separated
- 3/4 lb sirloin beef
- 3 tbsp peanut oil
- 1/2 tsp salt
- 1 tbsp cooking wine
- 3 tbsp water
- 3 tbsp cornstarch
- 1 egg
- 2 1/2 tbsp oyster sauce
- 2 tbsp light soy sauce
- 3/4 tbsp dark soy sauce
- 1 tbsp sugar
- a few drops of sesame oil
- 1 clove garlic, crushed
- 1/2 cup chicken broth or beef broth
MUSTARD ROASTED FISH (Ina Garten)

Preheat the oven to 425F. Line a sheet pan with parchment paper (you can also use an ovenproof baking dish)
- 4 , 8 oz fish fillets such as red snapper or moonfish (opah)
- Kosher salt and freshly ground black pepper
- 8 oz creme fraiche
- 3 tbsp Dijon mustard
- 1 tbsp whole-grain mustard
- 2 tbsp minced shallots
- 2 tsp drained capers
ITALIAN DRESSING

Place ingredients in a jar and shake well
- 1/4 cup red wine vinegar
- 1 cup olive oil
- 1 clove garlic, minced
- 1 tbsp fresh basil
- 2 tbsp fresh parsley, chopped
- Salt and freshly ground pepper
COCONUT MANGO CHICKEN STIR-FRY

Heat the oil in a wok or skillet
- 1 tbsp oil
- 1 1/2 boneless chicken breasts. diced into 1" pieces
- 1 small onion, diced
- 1 clove garlic, crushed
- 1 tbsp chopped fresh ginger-root
- 1 1/2 cups water, more if necessary
- 1 lb sweet potatoes, peeled and cut
- 1/2 cup coconut milk
- 2 tbsp peanut butter
- 1/2 tsp hot Asian chili paste
- 1 mango, ripe but firm, peeled and cut into 1" chunks
- 3 tbsp minced green onions
- 3 Tbsp chopped fresh cilantro
BEEF VEGETABLE STIR-FRY

To prepare marinate, combine vinegar, 2 tbsp soy sauce and pepper in a heavy ziplock plastic bag
- 2 tbsp rice vinegar
- 2 tbsp sou sauce
- 1/4 tsp freshly ground pepper
- 1 lb sirloin steak, thinly sliced
- 4 oz vermicelli rice noodles
- Boiling water
- 2 tbsp canola oil
- 2 cups sliced mushrooms
- 2 cups sliced asparagus
- 1/2 cup julienned carrot
- 1/2 cup beef broth
- 1/2 cup sliced green onions
- 2 tbsp hoisin sauce
- 1 tbsp oyster sauce
- 1 tbsp soy sauce
- 1/2 tbsp sesame oil
BRUSSELS SPROUTS - SPICY ROASTED WITH CANDIED PECANS

Spread out a large sheet of parchment paper or foiil to cool pecans on
- Candied Pecans:
- 1/2 cup brown sugar
- 2 tbsp vegetable oil
- 2 cups pecan halves
- Brussel Sprouts:
- 3 lbs Brussel sprouts
- 4 tbsp olive oil
- A few pinches of Kosher salt
- Medium pinch of chili flakes
SALAD NICOISE

In small bowl, combine extra-virgin olive oil, fresh rosemary, salt and pepper
- Salad:
- 6 tablespoons (90 mL) extra-virgin olive oil
- 2 tablespoons (25 mL) chopped fresh rosemary (or pinch dried)
- 1 tablespoon (15 mL) salt
- 1 tablespoon (15 mL) pepper
- 2 pounds (1 kg) small potatoes, halved
- 1 pound (500 g) asparagus, trimmed
- 1 pound (500 g) tuna steak (sushi quality), 1-inch (2.5 cm) thick
- 10 cups (2.5 L) mixed greens or arugula
- 4 hard cooked eggs
- 1/2 cup (125 mL) pitted black olives
- Nicoise Dressing:
- 1 clove garlic, minced
- 3 tablespoons (50 mL) balsamic vinegar
- 1 tablespoon (15 mL) lemon juice or sherry vinegar
- 1/2 cup (125 mL) extra-virgin olive oil
- 1/4 teaspoon (1 mL) salt
- 1/4 teaspoon (1 mL) pepper
- 2 tablespoons (25 mL) chopped fresh tarragon or basil
- 1 small bunch chives, cut in 2-inch (5 cm) pieces
SUGARED PECANS

Combine egg white with 1 tsp water and beat until frothy
- 1 egg white
- 2 cups pecans
- 3/4 cup sugar
- 3/4 tsp cinnamon
- 1/4 tsp ground cloves
- 1/4 tsp allspice
- 1/4 tsp salt
SHRIMP & HAM JAMBALAYA

Microwave butter in a large, microwave dish on High for 30 seconds or until melted
- 1/3 cup butter
- 1 1/2 cups finely chopped onions
- 2 tablespoons finely chopped garlic
- 454 mL can Italian plum tomatoes, drained, chopped
- 3 tablespoons ttomato paste
- 1/2 cup chopped celery
- 1/4 cup finely chopped green pepper
- 1 tablespoon finely chopped parsley
- 3/4 teaspoon powdered cloves
- 1/2 teaspoon dried thyme
- 1/2 teaspoon cayenne
- 1/4 teaspoon coarsely ground black pepper
- 1 teaspoon salt
- 1 lb cooked lean smoked ham, cut into 1/2- inch cubes
- 2 lbs. cooked and cleaned medium shrimp
- 3 cups cooked white rice.

- 1 tbsp milk
