APPLE BREAKFAST MUFFINS

Preheat the oven to 375F. Combine the oats and yogurt in a medium bowel and let stand for 5 to 10 minutes

- 2 cups shredded peeled apple
- 2 eggs
- 1/4 cup fat-free milk
- 1 tbsp canola oil
- 1 tsp vanilla
- 3/4 cup whole wheat flour
- 3/4 cup all-purpose flour
- 2/3 cup firmly packed brown sugar
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp salt
- 3/4 cup chopped dried cranberries
SPICY LOBSTER PASTA

- Australian ingredients:
- 2/3 cup hazelnuts
- 1/2 cup toasted sesame seeds
- 2 tbsp coriander seeds
- 2 tbsp cumin seeds
- 2 tsp freshly ground black pepper
- 1 tsp sea salt
- roasted almonds, sesame seeds, coriander seeds, sea salt, fennel seed, whole anise seeds.
Pork Tenderloin Chinese Style

Lay tenderloins on cutting board with long side running almost perpendicular to counter edge
- 2 (12 to 16-ounce) pork tenderloins, trimmed
- 1/2 cup soy sauce
- 1/2 cup apricot preserves
- 1/4 cup hoisin sauce
- 1/4 cup dry sherry
- 2 tablespoons fresh ginger, grated
- 1 tablespoon toasted sesame oil
- 2 garlic cloves, minced
- 1 teaspoon Chinese five-spice powder
- 1 teaspoon pepper
- 1/4 cup ketchup
- 1 tablespoon molasses
- 2 teaspoons vegetable oil
VINAIGRETTE SALAD DRESSING

- 1/2 tsp salt
- 1/4 tsp dry mustard
- 2 tbsp white wine vinegar
- Lemon juice
- 6 tbsp salad oil

SPICY COCONUT SHRIMP LETTUCE WRAPS WITH MANGO BASIL SALSA

Salsa: Combine all ingredients together and keep covered in the refrigerator
- Salsa:
- 3 mangos, peeled and diced (1 1/2 cups diced)
- 3 green onions, thinly sliced (green part only)
- 5 large basil leaves, julienned
- 1 lime, juiced
- Salt and freshly ground pepper, to taste
- Shrimp:
- 1 lb medium (32) shrimp, peeled and deveined
- 2 jalapeños, seeded and thinly sliced
- 1 large garlic clove, minced
- 1/2 " piece ginger, peeled and grated
- 1 tbsp brown sugar
- 2 tbsp soy sauce
- 1/2 ime, zested
- 1/4 cup coconut milk
- 1 tbsp chopped fresh basil leaves
- 2 tbsp vegetable oil
- 1/2 tsp alt
- Freshly ground black pepper, to taste
- To serve: iceberg lettuce leaves
BRAISED RED CABBAGE

In large saucepan, melt butter over medium heat
- 1 tbsp butter
- 1 clove garlic, minced
- 1 Empire apple, peeled, cored and diced
- 8 cups shredded red cabbage
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 cup water
- 2 tsp cider vinegar
CHILI CON QUESO WITH CHEDDAR CHEESE

In medium skillet, cook onion in butter until tender but not brown
- 1/2 cup finely chopped onion
- 1 tbsp butter
- 2 medium tomatoes, peeled, seeded and chopped
- 1 1/2 cups shredded Cheddar cheese
- 1 , 4 oz can green chili peppers, rinsed, seeded and chopped
- 1/4 tsp salt
- Milk
SEX PIE

Mix together flour and butter and pat into 13" x 9" pan and bake 20 minutes at 350F
- 2 cups flour
- 1/2 cup butter
- 2 , 8 oz packages cream cheese
- 1/2 cup icing sugar
- 1/2 cup cool whip
- 1 package instant chocolate pudding
- 1 package instant vanilla pudding
- 1 chocolate bar
