CHERRIES JUBILEE

Drain cherries, reserving juice
- 1 can pitted black cherries
- 1 tbsp sugar
- 1 tbsp cornstarch
- 1/4 cup warmed cognac or brandy
- 1 qt vanilla ice cream
RED VELVET CAKE WITH CREAM CHEESE FROSTING

Preheat oven to 350F. Grease 2, 9" round baking pans
- Cake:
- 1/2 cup sour cream
- 1/4 cup unsweetened cocoa powder, sifted
- 1 bottle liquid red food colouring
- 1 tsp vanilla
- 3 cups sifted cake flour
- 1/2 tsp salt
- 1/2 cup butter, softened
- 1/2 cup oil
- 1 1/2 cups sugar
- 2 eggs
- 1 cup buttermilk
- 2 tsp vinegar
- 1 1/2 tsp baking soda
- Cream Cheese Frosting:
- 8 oz cream cheese, softened
- 1/4 cub butter, softened
- 1 tsp vanilla
- 4 cups icing sugar
SHRIMP WITH PROSCUITTO & BOURSIN

Cut a slit in back of each shrimp and stuff a small amount of Boursin in the slit
- 21-25 size shrimp (shelled, deveined and tail removed)
- Boursin cheese
- Proscuitto

- 4 cups stove-top macaroni and cheese
- Nonstick cooking spray
- 1/2 cup pure maple syrup
- 1/4 cup country Dijon-style mustard
- 2 teaspoons cider vinegar
- 1 teaspoon snipped fresh thyme
- 1/4 teaspoon salt
- 1/2 cup panko bread crumbs
- 1 tablespoon butter, melted
- 16 thin slices cooked ham (8 ounces)

- Chopped chives for garnish
RAISIN BUTTER TARTS

- Filling:
- 1 recipe Double-Crust Pie Dough (shaped in 2 logs and chilled)
- 3/4 cup packed dark brown sugar
- 3/4 cup corn syrup
