COLESLAW DRESSING (Patti)

Mix salad dressing. Add to coleslaw ingredients
- 1 green cabbage, shredded
- 4 carrots, shredded
- 1 green onion, finely chopped
- 1/4 cup canola oil
- 2 tbsp vinegar
- 1/2 tsp prepared mustard
- 1/4 tsp celery salt
- 2 tbsp mayonnaise
- Salt and pepper
- Dash of paprika
FROZEN AMARETTO SOUFFLE

Whip eggs and sugar until thick and fluffy
- 6 egg yolks
- 2 whole eggs
- 6 oz berry sugar
- 2 oz amaretto liqueur
- 2 cups heavy cream, whipped
- almond slivers & shaved chocolate to make 3/4 cup combined
COUSCOUS WITH PINE NUTS & MINT

- 2 tbsp good olive oil
- 1 tsp unsalted butter
- 1 cup chopped yellow onion
- 3 cups chicken stock
- 1 1/2 cups couscous
- Kosher salt and freshly ground black pepper
- 1/2 cup julienned fresh mint leaves, loosely packed
- 1/3 cup pine nuts, toasted
LOBSTER BISQUE

Melt butter in saucepan over low heat
- 2 tails lobster meat, cooked and chopped
- 4 cups lobster or fish stock
- 5 tbsp unsalted butter
- 1 medium yellow onion, chopped
- 1 small carrot, peeled and finely chopped
- 1 large clove garlic, minced
- 1/4 cup flour
- 1 cup dry white wine
- 1 tbsp tomato paste
- 1 tbsp chopped fresh thyme
- 1 bay leaf
- 1 cup heavy cream
- 2 tbsp cream sherry
- Salt and freshly ground black pepper
BBQ SPARERIBS (baked)

- 3 lb spareribs, cut
- 2 tbsp brown sugar
- 2 tbsp Worcestershire sauce
- 1/4 cup vinegar
- 1/2 cup water
- 2/3 cup Ketchup
- 2 tsp mustard
- 2 tbsp butter 1/2 tsp MSG (optional)
ROMAINE WITH PARMESAN VINAIGRETTE

Mix first 5 ingredients in jar
- 1/4 cup fresh lemon juice
- 3 tbsp grated Parmesan cheese
- 2 tsp whole grain mustard
- 1 tsp Worcestershire sauce
- 1 garlic clove, minced
- 6 tbsp extra-virgin olive oil
- 2 hearts of romaine
STRAWBERRY MARGUERITA TORTE

Preheat oven to 375F. Coarsely chop almonds with brown sugar, flour and salt in food processor
- 2 cups whole un-blanched almonds
- 1/3 cup packed golden brown sugar
- 1/4 cup flour
- Pinch of salt
- 6 tbsp unsalted, butter, melted and cooled
- 1 lb strawberries, halved (3 1/2 cups)
- 1 tbsp finely grated fresh lime zest (from 3 limes)
- 1/4 up fresh lime juice (from 2 limes)
- 1-14 oz can sweetened condensed milk
- 2 tbsp tequila
- 2 tbsp cointreau
- 1 1/2 cups chipped whipping cream

Melt butter, brown sugar and syrup, boil for 2 minutes
- 1 1/2 - 2 bags Old Dutch Popcorn Twists
- 1/2 lb butter
- 1 cup brown sugar
- 1/2 cup golden corn syrup
- 1 tsp baking soda

Antipasto: Grill sausage over medium heat on a natural gas BBQ until browned and completely cooked, about 15 to 20...
- Antipasto:
- 1/2 lb mild Italian sausage
- 2 tbsp olive oil
- 1 clove garlic, crushed
- 1 red pepper, cut into squares
- 1 green pepper, cut into squares
- 1 yellow pepper, cut into squares
- 3 cups cauliflower florets
- 1/2 cup cubed mozzarella cheese
- 1/2 cup pitted ripe olives
- Balsamic Vinaigrette:
- 1/4 cup olive oil
- 1/4 cup balsamic vinegar
- 1 clove garlic, crushed
- 3 tbsp chopped fresh basil
- 1 tbsp chopped fresh oregano
- 1 tbsp chopped fresh parsley
- 1/2 tsp freshly ground black pepper
- 1/4 tsp salt
- 1 tbsp capers
GRILLED KEY LIME CHICKEN

To make marinade, combine all ingredients except chicken in a food processor and process until well blended
- 1 cup key lime juice (12 to 14 key limes)
- 2 tsp honey
- 2/3 cup water
- 2 tsp salt
- 1/2 tsp pepper
- 1 tsp thyme
- 2 tbsp olive oil
- 1 tbsp fresh ginger, peeled and chopped
- 4 large boneless, skinless chicken breasts
