BEEF BOURGUIGNON

- 1/4 extra virgin olive oil
- 2 1/2 to 3 lbs lean sirloin, cut into large bite-sized pieces
- 3 tbsp flour, plus some for dredging
- Coarse salt and black pepper
- 1 clove garlic, crushed
- 1/2 lb good quality bacon, chopped
- 2 large carrots, peeled and chopped
- 1 large onion, peeled and chopped
- 1 bay leaf
- 1 tbsp fresh thyme, chopped
- 1 tbsp fresh basil, chopped
- 1 tbsp fresh oregano, chopped
- One bottle good quality French Burgundy wine
- 2 cups beef stock
- 5 tbsp butter, divided
- 1 cup frozen pearl onions
- 1 rounded tbsp sugar
- 1/2 lb while mushrooms, sliced
- 1 tbsp fresh orange zest
- 1 tbsp fresh lemon zest
- 1/4 cup flat leaf parsley, a generous handful
WARM LOBSTER DIP

In saucepan, melt butter over medium heat; cook leek and garlic, stirring, until leek is softened, about 3 minutes
- 2 tbsp butter
- 1 small leek (white and light green parts only), thinly sliced
- 1 clove garlic, minced
- 2 tbsp flour
- 1/2 cup whipping cream
- 1/3 cup milk
- 1/4 tsp each smoked paprika and salt
- Pinch each cayenne pepper and black pepper
- 1 cup lobster meat
- 1/2 cup shredded Gruyere cheese
- 2 tbsp lemon juice
- 1 tbsp dry sherry
CHILI

Cook hamburger and onion in microwave for 10 minutes, stir and separate well at 5 minutes
- 1 lb hamburger
- 1 medium onion, chopped
- 1 can kidney beans
- 1 can tomato soup
- 1/3 cup water
- 1 tsp salt
- 1 1/2 tsp chili powder
- 1 tsp vinegar
- 1 , 14 oz can diced tomatoes
- 1 can garbanzo beans
- 1 package fresh mushrooms, sliced
- 1 green pepper, cut into 1/2" cubes
- 1 red pepper, cut into 1/2" cubes
- 1/2 tsp cumin

Mix first ingredients well in bowl
- 8 oz. cream cheese (block - not soft)
- 1/2 cup of commercial pizza sauce
- 1/2 tsp. dried whole oregano
- 1/4 tsp. garlic powder
- 1/4 tsp. dried sweet basil
- 1/4 tsp. onion powder
- 1/2 - 1 tsp. chilli powder (optional)
- 1/2 cup finely chopped red pepper
- 1/2 cup finely chopped green pepper
- 1/4 cup sliced green onions
- 1/2 cup grated cheddar cheese
- 1/2 cup grated mozzarella cheese

- 1 small garlic clove, pressed
- 1/3 cup packed fresh grated Parmesan cheese
- Coarse kosher salt
MAPLE MUSTARD SALMON

Place salmon in an 8" x 8" baking dish
- 4 , 1/4 lb salmon fillets
- 1/4 cup butter, melted
- 1/4 cup maple syrup
- 4 tsp Dijon mustard
- 1 tsp low sodium soy sauce
PECAN RICE SALAD

Cook rice in simmering water, covered, for 45 to 50 minutes
- 2 cups brown rice
- 4 cups simmering water
- 1 cup chopped green beans
- 1 cup chopped mixed herbs
- 1 cup salted roasted pecans, chopped
- 1/3 cup olive oil
- Juice of 1 lemon
- Salt and pepper, to taste
