HOT CRAB DIP (WITH SPANISH FLAVOURS)

- 1/4 cup olive oil mayonnaise
- 2 tbsp sour cream1/2 cup spreadable cream cheese
- 2 tsp lemon juice
- 1/2 cup finely grated Manchego cheese,loosely packed
- 2 tsp lemon juice
- 1/2 cup chopped roasted red peppers
- 1 clove garlic, finely chopped
- 1 green onion, chopped
- 1/2 tsp sweet smoked paprika
- 1 can chunk crabmeat, drained
- Freshly ground black pepper to taste
PINEAPPLE SUNDAES WITH RUM SAUCE

Cut off top and bottom of pineapple; cut off skin
- Rum Butter Sauce:
- 1 pineapple
- 2 cups vanilla ice cream
- 3/4 cup Rum Butter Sauce
- 1/4 cup toasted shredded sweetened coconut
- 1/4 cup unsalted butter
- 3/4 cup dark brown sugar
- 1/2 cup whipping cream
- 2 tbsp rum
- Pinch of salt
ROTINI WITH SUN-DRIED TOMATOES & BASIL

In large pot of boiling salted water, cook pasta until tender but firm, 8 to 10 minutes
- 7 cups rotini (12 oz/375 g) 1.75 L
- 2/3 cup finely chopped drained oil-packed sun-dried tomatoes (about 10) 150 mL
- 1/2 cup chopped fresh basil (or 1/2 tsp/2 mL dried) 125 mL
- 1/2 cup grated Parmesan cheese 125 mL
- 1/4 cup chopped fresh parsley 50 mL
- 2 tbsp chopped fresh chives or green onions 25 mL
- 2 tbsp extra-virgin olive oil 25 mL
- 2 cloves garlic, minced 2
- 1/4 tsp pepper 1 mL
APPLE BREAD

Cream butter and sugar. Beat in eggs, one at a time
- 1/4 cup butter
- 2/3 cup sugar
- 2 eggs
- 2 cups flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp cinnamon
- 1 tsp salt
- 1 1/2 cups grated apple
- 1/2 cup raisins
GRILLED SHRIMP WITH LEMON LINGUINE

Grilled Shrimp: Soak bamboo skewers in hot water for 30 minutes
- Grilled Shrimp:
- Bamboo skewers
- 1 pkg (340 g) frozen raw shrimp, thawed
- 2 tbsp (25 mL) oil
- 2 cloves garlic, crushed
- 1/2 tsp (2 mL) dill weed
- Lemon Linguine:
- 16 oz (500 g) linguine
- 1 cup (250 mL) frozen peas
- 1 1/4 cups (300 mL) light cream (10%)
- 2 tsp (10 mL) grated lemon peel
- 1 clove garlic, crushed
- 1/4 tsp (1 mL) freshly ground pepper
- 1 cup (250 mL) freshly grated Parmesan cheese
FROZEN STRAWBERRY CRUNCH CAKE

Preheat oven to 350F. Put the granola bars in a food processor and process until fine crumbs
- 1 box Nature Valley Crunchy Granola Bars (Oats & Honey)
- 2 tbsp brown sugar
- 1/4 cup flour
- 3 tbsp melted butter
- 2 egg whites
- 1/2 cup sugar
- 1 cup heavy whipping cream
- 1 lemon
- 4 oz cream cheese, softened (can use strawberry cream cheese)
- 1 1/2 cups freshly chopped strawberries
