BLUE CHEESE WAFERS

Combine butter and cheese in food processor
- 1/4 lb butter, at room temperature
- 3/4 cup pine nuts
- 1 cup flour
- 1/2 lb blue cheese or gorgonzola, fine crumbled
GRILLED SHRIMP WITH CILANTRO, LIME & PEANUTS

Zest limes into a bowl. Squeeze in juice from 1 lime, and whisk in fish sauce and sugar
- 2 limes
- 2 teaspoons fish sauce
- 1/2 teaspoon sugar
- 1 pound (about 15) jumbo shrimp, shells on
- 2 teaspoons safflower oil
- Coarse salt and freshly ground pepper
- 1 1/2 cups coarsely chopped fresh cilantro
- 1/2 cup salted peanuts, coarsely chopped
- 2 scallions, finely chopped
BELGIAN WAFFLES (Mom)

- 2 cups milk
- 2 cups flour
- 1 tbsp baking powder
- 1/2 tsp salt
- 1/3 cup canola oil
- 2 egg whites, stiffly beaten
MAPLE GLAZED BACON

Separate bacon slices and place in a heavy plastic bag
- 1 lb (500 g) sliced bacon
- 1/3 cup (75 mL) maple syrup
- 1 tsp (5 mL) freshly ground pepper
STRAWBERRY SWIRL CHEESECAKE

Strawberry Swirl: In blender, puree together strawberries, sugar and lemon juice; stir in flour
- Strawberry Swirl:
- 1 1/2 cups vanilla wafer crumbs
- 1/4 cup unsalted butter, melted
- 3 , 250 gm packages of cream cheese, softened
- 3/4 cup sugar
- 1 tsp vanilla
- Pinch of salt
- 1 cup sour cream
- 1 tsp grated lemon zest
- 4 eggs (at room temperature)
- 1 cup quartered hulled strawberries
- 1 tbsp sugar
- 1 tsp lemon juice
- 2 tsp flour
- Topping:
- 2 cups quartered hulled strawberries
- 3 tbsp sugar
- 1 tsp lemon juice
SHRIMP CHIP DIP (Mom)

Mix all ingredients together with mix master and serve with chips
- 1 , 4 oz package cream cheese
- 1/2 cup sour cream
- 1/2 cup mayonnaise
- Salt and pepper to taste
- 2-3 drops Tabasco sauce
- 1/3 lb small shrimp
- 1 tsp onion powder
DELUXE PIZZA

Place oven rack in lower third of you oven
- 1/2 Cup (125 ml) tomato sauce
- 2 tbsp (25 ml) store-bought or homemade pesto
- 1 regular or whole wheat 12-inch pizza-dough round
- 1 1/2 cup (375 ml) grated mozzarella cheese
- 1/3 (75 ml) cups grated mozzarella cheese
- 1/2 medium green bell pepper, cut into small cubes
- 1/2 (125 ml) cup thinly sliced pepperoni
- 4-6 medium mushrooms, thinly sliced
ICHIBAN SALAD

Mix together cabbage, green onions, almonds, bean sprouts and mushrooms
- Dressing:
- 1 small cabbage, shredded
- 2 green onions, chopped
- 1/2 cup toasted almonds
- 1/2 pound bean sprouts
- 1 pound fresh mushrooms
- sesame seeds
- half package chow mein noodles
- 1 package Ichiban noodles, broken in pieces
- 1 package Ichiban soup
- 1/2 cup oil
- 1 teaspoon salt
- 3 teaspoons vinegar
- 1 teaspoon sugar
- 1/2 teaspoon pepper
- 1/4 cup soy sauce, or to taste
MANDARIN MOUSSE CUPS

In small saucepan, sprinkle gelatin over orange juice; let stand for 5 minutes
- 1 pkg (7 g) unflavoured gelatin
- 2 tbsp (30 mL) orange juice
- 2 cans (each 10 oz/84 ml) mandarin orange sections, drained
- 2 tbsp (30 mL) condensed milk
- 1 tsp (5 mL) finely grated orange rind
- 1 1/4 cups (300 mL) whipping cream
ALL-BUTTER PIE PASTRY

In food processor, pulse flour with salt; pulse in butter until mixture is coarse crumbs with some bigger chunks
- 2 1/2 cups flour
- 1/4 tsp salt
- 3/4 cup unsalted butter
- 2 egg yolks
- 1/3 to 1/2 cup ice water
