  • 1 leek, thinly sliced
  • 1 lb baby potatoes, boiled and cut In half
  • 1 quart cherry tomatoes, cut in half
  • 1/4 cup fresh basil, chopped
  • 2 Tbsp sherry wine vinegar
  • 2 Tbsp extra virgin olive oil
  • 1/2 tsp sea salt
  • freshly ground pepper to taste
  • I cup goat feta, crumbled, optional

  • 1 lb soba (buckwheat) noodles (can sub practically any favorite noodle)
  • Lettuce, thinly sliced

  • Carrot, julienned
  • Asian pear, julienned
