This dish is called Fatteh and is a Lebanese main breakfast dish

- 2 cups Mediterranean Yogurt
- 4 cloves minced garlic
- 1/2 cup lemon juice
- 1/2 cup tahini paste
- 1 cup water
- 1/2 tsp salt
- (meat)
- 1 lb ground beef
- 1/4 lb ground lamb
- 1/2 tsp black pepper
- 1 tsp salt
- 3 toasted pita's
- 1 16oz. can chick peas
- 3 tbs chopped parsley
- 1/3 cup melted browned butter
- 1/2 cup toasted pine nuts
Miso-Glazed Sea Bass with Asparagus

Delicate, sophisticated flavors come together almost effortlessly with the help of miso, a Japanese staple
- 2 tablespoons white miso (fermented soybean paste; not sweet or labeled "saikyo")
- 1 1/2 teaspoons sugar
- 1 teaspoon fresh lemon juice
- 1/2 teaspoon water
- 1/8 teaspoon black pepper
- 1 lb medium asparagus, trimmed
- 2 teaspoons olive oil
- 4 (5- to 6-oz) sea bass fillets with skin (1 inch thick)
Chipotle Meatballs

Excellent served with rice and/or tortillas
- MEATBALLS:
- 2 slices bacon, minced
- 2 garlic cloves, minced
- 2 large eggs
- 1/2 cup bread crumbs
- 1 1/2 teaspoons salt
- 1 1/2 pounds ground pork
- 2 teaspoons dried oregano or finely chopped fresh mint
- SAUCE:
- 1-2 teaspoons chipotle powder (or a couple teaspoons of adobo sauce)
- 2 Tbsp olive oil
- 1 medium onion, chopped, about 1 cup
- 3 garlic cloves, minced
- 1-3 canned chipotles in adobo, minced fine and sauce reserved
- 1 28-ounce can crushed tomatoes (preferably fire-roasted)
- 1 teaspoon dried oregano
- 1/2 cup beef or chicken broth

1. Rinse chicken and pat dry
- 12 skinless boneless chicken thighs, about 3 Ibs (1.5 kg)
- 2 tbsp minced peeled gingerroot
- 2 tbsp minced garlic
- 2 tsp salt or to taste
- Juice of 1 lime or lemon
- 3 tbsp vegetable oil
- 5 tbsp coriander seeds, freshly toasted and powdered in spice grinder (to yield about 1/4 cup/50 mL powder)
- 1 tbsp freshly ground black pepper
- 2 green onions, finely sliced, with some green, for garnish
Cilantro Jalapeno Hummus

In a food processor add garbanzo beans, garlic and salt and blend until smooth
- 1 cup washed cilantro
- 1 jalapeno (seeds removed, reserve some slices for garnish)
- 1 16oz can garbanzo beans (drained)
- 1/2 cup tahini paste
- 1/2 cup lime juice
- 3 cloves minced garlic
- 1/2 tsp salt
- 1/4 cup sour cream
- 1/2 tsp black pepper
- olive oil (garnish topping)
- paprika (garnish topping)
Ginger Broccoli

Heat oil in a large skillet over medium-high heat
- 1 tablespoon oil, canola
- 2 tablespoon garlic, minced
- 4 teaspoon ginger, fresh, minced
- 1 pounds broccoli, crowns only, trimmed and chopped, (about 6 cups)
- 3 tablespoon water
- 1 tablespoon fish sauce
- 1 tablespoon vinegar, rice
