- 4 pounds brussels sprouts, halved lengthwise
- 6 tablespoons extra-virgin olive oil

All-Bran Classic Carrot Muffins

1.In large bowl, stir together flour, cereal, sugar, cinnamon, baking powder, soda, salt raisins and carrots

- 1 1/2 cups Kellogg's* All-Bran* Original cereal
- 1/2 cup packed brown sugar

Asian-Style Veggie Rolls

1. To prepare rolls, add hot water to a large, shallow dish to a depth of 1 inch
- Rolls:
- 8 (8-inch) round sheets rice paper
- 2 cups thinly sliced Bibb lettuce leaves (about 4 large)
- 2 cups cooked bean threads (cellophane noodles)
- 1 cup fresh bean sprouts
- 1 cup shredded carrot (about 1 large)
- 1/2 cup coarsely chopped fresh mint
- 1/2 cup fresh cilantro leaves
- 1/4 cup thinly sliced green onions
- Sauce:
- 1 tablespoon sugar
- 3 tablespoons fresh lime juice (about 1 lime)
- 3 tablespoons water
- 2 tablespoons fish sauce
- 1 garlic clove, minced
- 1 Thai chile, thinly sliced

- 1 pound asparagus (I used 1 bundle from Trader Joe’s) trim the ends
- 1 slice multi-grain or whole wheat bread, I used Milton’s Original Healthy Multi-Grain bread
- 2 teaspoons extra virgin olive oil
- Cooking spray, I used olive oil cooking spray for this recipe
- Salt and pepper, to taste
- Topping Ingredients
- 1 1/2 tablespoons Light Caesar Dressing, such as Cardini’s or Girards Light Caesar

Chicken Cutlets with Caper Sauce

Sometimes, especially after the holidays, all you want is a light, good meal
- 2 Tbsp olive oil, divided
- 2 chicken breast halves, pounded very thin, and then cut in half, so that you have 4 thin cutlets
- Salt
- 1 large shallot, minced, about 2 Tbsp
- 2 garlic cloves, minced
- 1/2 cup white wine or chicken stock
- 1/2 teaspoon red pepper flakes
- 1 Tbsp capers, drained
- 2-3 cups arugula, torn into bite-sized pieces
- 1/2 fennel bulb, shaved thin
- 16-24 paper thin shavings of parmesan cheese

Cut pork tenderloin into 3/4" cubes and place in shallow dish
- 1.5 lbs Pork tenderloin
- 1/4 Cup butter
- 1 Tbsp lemon juice
- Grated leamon rind
- 1/2 tsp tabasco

Pepper Chicken

1. Rinse chicken and pat dry
- 12 skinless bone-in chicken thighs, 12
- or drumsticks and thighs
- (about 4 Ibs/2 kg)
- 2 cups plain nonfat yogurt 500 mL
- 2 tsp cornstarch- 10 mL
- 1 tbsp minced peeled gingerroot 15 mL
- 1 tbsp minced garlic 15 mL
- 2 minced green chilies, 2
- preferably serranos
- 2 tsp salt or to taste 10 mL
- 1 cup cilantro, chopped 250 mL
- 2 tbsp vegetable oil 25 mL
- 1 tbsp freshly cracked black peppercorns 15 mL
Memphis Dust Recipe

Preparation time. 10 minutes to find everything and 5 minutes to dump them together
- 3/4 cup firmly packed dark brown sugar
- 3/4 cup white sugar
- 1/2 cup paprika
- 1/4 cup kosher salt
- 1/4 cup garlic powder
- 2 tablespoons ground black pepper
- 2 tablespoons ground ginger powder
- 2 tablespoons onion powder
- 2 teaspoons rosemary powder
- Yield. Makes about 3 cups. I typically use about 1 tablespoon per side of a slab of St. Louis cut ribs, and a bit less for baby backs. Store the extra in a zipper bag or a glass jar with a tight lid.
