- 1 C. sliced onion
- 1 C. red bell pepper strips
- 1 C. yellow bell pepper strips
- 10 garlic cloves, minced
- 1/2 C. grated Parmesan cheese
- 1/4 C. chopped fresh or 4 t. dried basil
- 4 t. dried oregano
- 1/4 t. salt
- 1/4 t. pepper
- 2 C. sliced zucchini
- 3 medium tomatoes (about 1 1/2 lb) cut into 1/4" slices
- 1 small eggplant (about 1 lb) peeled and cut into 1/4" slices
Cranberry Orange Bread

In a large bowl, combine dry ingredients
- 2 cups all-purpose flour
- 1 cup sugar
- 1-1/2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 egg
- 1/2 cup orange juice
- Grated peel of 1 orange
- 2 tablespoons butter, melted
- 2 tablespoons hot water
- 1 cup fresh or frozen cranberries
- 1 cup coarsely chopped walnuts

- 1 c. water
- 1/4 c. hulled millet
- 1 T. margarine
- 3 c. coarsely chopped onion
- 2 1/4 c. coarsely chopped zucchini
- 2 c. coarsely chopped carrot
- 2 c. coarsely chopped unpeeled red potato
- 2 c. coarsely chopped green beans
- 1 1/2 c. coarsely chopped celery and leaves
- 5 (10 1/2 oz) cans low sodium chicken broth
- 2 c. coarsely chopped unpeeled tomato
- 1 t. salt
- 1/2 t. pepper
- 1/2 t. dried whole basil
- 1/2 t. dried whole thyme
- 1 bay leaf
- 1 c. 1% low-fat milk
- 1 c. finely shredded fresh spinach

- 1 teaspoon ground ginger
- 1/4 teaspoon salt
- 1/2 cup fat-free sour cream
- 1/4 cup canola oil
- 1/4 cup 1% low-fat milk
- 1 teaspoon vanilla extract
- 2 large egg whites
- 1 large egg
- 3 cups grated carrot (about 6 medium)
- 1/2 cup dried currants
- 1/4 cup chopped pecans, toasted
Twice Baked Ranch Potatoes

- 1 can (11 oz) mandarin oranges, drained
- 1 kiwi, peeled sliced and halved
- 3 T. apricot preserves
- 2 t. water
- 1 sq. bakers white chocolate, melted
