Pumpkin Lasagna

Yummy!! Sauce is rich, so a little goes a long ways
- SAUCE:
- Olive oil
- 2 cups pureed pumkin
- 1 red onion, chopped
- 1 small garlic, chopped finely/minced
- fresh sage leaves, loosely chopped
- 1/2 pint heavy cream
- 1/4 cup each, shredded parmesean and romano cheese
- 3 mild italian sausages, casings removed, chopped and browned
- dash oregano, nutmeg, and white pepper
- LASAGNA LAYERS:
- homemade pasta lasagna squares, cooked
- fresh spinach
- ricotta
- shredded cheeses of choice

Preheat oven to 350 degrees
- FOR THE TOPPING
- 4 tablespoons unsalted butter, melted
- 1/2 cup all-purpose flour
- 1/4 cup sugar
- Coarse salt
- FOR THE CAKE
- 1 1/2 sticks unsalted butter, room temperature, plus more for buttering pan
- 1 pound rhubarb, trimmed and cut on a very sharp diagonal about 1/2 inch thick
- 1 3/4 cups sugar
- 1 1/2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- Coarse salt
- 1/2 teaspoon finely grated orange zest plus 1 tablespoon fresh orange juice
- 2 large eggs
- 1 cup sour cream
Artichoke Dip

Mix all ingredients together and bake for 30 min
- 8 oz Canned Artichoke
- 1/3 cup Parmesan Cheese
- 1/2 cup Sour Cream
- 1/2 cup Mayo
- 1-8 oz Cream Cheese
- garlic salt, to taste
- dash hot sauce
Pecan Caramels

Line 13 x 9 pan with foil; grease the foil with 2 tsp butter and set aside
- 2 tsp plus 1 cup butter, divided
- 1 1/4 cups sugar
- 1 1/4 cups brown sugar, packed
- 1 cup dark corn syrup
- 2 cups heavy whipping cream, divided
- 2 lbs chopped pecans
- 1 tsp vanilla
Italian Beef Sandwiches

Cut roast in half; place in a 5qt slow cooker
- 1-3 lb Boneless beef chuck roast
- 1 tsp Italian seasoning
- 1/4 tsp Cayenne pepper
- 1/4 tsp Pepper
- 1/4 cup Water
- 1 med. Green and Red peppers; diced
- 1 minced Garlic clove
- 1 envelope Onion soup mix
- 2 Tblsp Worcestershire sauce
- 2 loaves Italian bread, cut into halves, lengthwise
- Provolone cheese slices (optional)
