White Texas Sheet Cake

1. Preheat oven to 375°. Grease a 15x10x1-in
- FROSTING:
- 2 2 2 cups all-purpose flour
- 2 2 2 cups sugar
- 1 1 1 teaspoon baking powder
- 1 1 1 teaspoon salt
- 1/4 1/4 1/4 teaspoon baking soda
- 1 1 1 cup butter, cubed
- 1 1 1 cup water
- 2 2 2 large eggs
- 1/2 1/2 1/2 cup sour cream
- 1 1 1 teaspoon almond extract
- 1/2 1/2 1/2 cup butter, cubed
- 1/4 1/4 2% cup 2% milk
- 4-1/2 4-1/2 4-1/2 cups confectioners' sugar
- 1/2 1/2 1/2 teaspoon almond extract
- 1 1 1 cup chopped walnuts
- 1 1. to 375°. 15x10x1-in. to 375°. Grease a 15x10x1-in. baking pan.
- 3 3. to 18-22 20 prepared pan. Bake until golden brown and a toothpick inserted in center comes out clean, 18-22 minutes. Cool on a wire rack 20 minutes.
- 4 4. to 20 frosting, combine butter and milk in a large saucepan; bring just to a boil. Remove from heat; gradually stir in confectioners' sugar and extract. Stir in walnuts. Spread over warm cake. Yield: 20 servings.

- 4 to 6 tablespoons (2 to 3 ounces) ice water

- Whole Wheat Crust
- 2 cups (8 1/2 ounces) King Arthur whole wheat flour, 100% organic white whole wheat flour preferred
- 2 tablespoons (7/8 ounce) buttermilk powder, optional
- 2 tablespoons (1/2 ounce) confectioners' sugar
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 3/4 cup (1 1/2 sticks, 6 ounces) cold butter, unsalted preferred
- 1/4 cup (2 ounces) orange juice
- 1/4 to 1/2 cup (2 to 4 ounces) ice water
- Filling
- 1/2 cup (5 1/2 ounces) light corn syrup or brown sugar corn syrup
- 3/4 cup (7 1/2 ounces) caramel from a block*
- 2 tablespoons (1 ounce) butter
- 1/2 cup (3 3/4 ounces) brown sugar
- 1/4 teaspoon salt
- 2 teaspoons vanilla extract
- 1 teaspoon vinegar (cider or white)
- 3 large eggs
- 3/4 cup (4 1/2 ounces) chocolate chips
- 3/4 cup (3 ounces) chopped pecans
- (Or unwrap caramel candies, soften in the microwave, and pack into a measuring cup and melt in microwave)
