Mango Salad - Gluten Free

1. Toast coconut in pan and leave to cool
- Salad:
- 1 mango, chopped
- 2 tbsp dry shredded unsweetened coconut
- 1/4 cup cilantro
- 3 green onions
- 2 tbsp cashews, chopped
- 1 tbsp fresh basil
- Dressing:
- 2 tbsp tamari (or soy sauce)
- 2 tbsp lime juice
- 1 tbsp brown sugar
- 1 tsp thai chili sauce
Mango Vermicelli

1. Place all ingredients (except vermicelli) into blender and pulse until finely diced
- 1 1/2 cups vermicelli
- 1 mango, chopped
- 1/2 red pepper
- 1/2 green pepper
- 1/4 cup chopped red onion
- 2 tbsp olive oil
- 3 tbsp lemon juice
- 1 clove garlic, chopped
- 1/2 cup cilantro, chopped
- 1/4 cup sweet thai chili sauce
Spicy Sausage Pasta

1. Cook pasta according to package directions, rinse and set aside
- 3 cups gluten free pasta
- 4 hot Italian sausages
- 1 clove garlic, minced
- 1 cup parsley, chopped
- 1/2 cup vegetable stock
- 1/4 cup red wine vinegar
- 1/4 cup olive oil
- Salt and ground black pepper
- 1/4 pound thick slices provolone, chopped
- 8 roasted red peppers from a jar, cut into small dice
- 1 yellow pepper, diced
- 1 orange pepper, diced
- 1/2 red onion, chopped
Shrimp Pasta with Asparagus

1. Cook pasta according to instructions 2
- 3 cups pasta
- 1 pound asparagus, steamed & cut in two-inch lengths
- 1/2 cup chopped oil-packed sun-dried tomatoes
- 1 pound peeled, deveined shrimp
- 1 tablespoon minced garlic
- 1 teaspoon dried oregano
- Red pepper flakes to taste
- 1 cup fresh spinach
- 1 3/4 cups chicken broth
- 1/2 cup dry white wine
- 2 tablespoons tomato paste
- Salt & pepper to taste
- 1/2 cup fresh basil, cut in ribbons
- Sprinkle of fresh Parmesan cheese for garnish
Chicken with Peanut-Chili Glaze

1. Whisk togeter first seven ingredients
- 1/2 cup peanut butter
- 1/2 cup chicken broth
- 2 tbsp tamari (or soy sauce)
- 2 tbsp honey
- 1 tbsp fresh lime juice
- 2 tbsp fresh lime zest
- 2 tsp chili paste
- 4 boneless chicken breasts
- salt & pepper
- Lime wedges and finely diced red bell pepper for garnish
Chicken & Seafood Paella

1. Preheat oven to 425 degrees 2
- 1 cup chicken broth
- 1/8 tsp tumeric
- 2 tbsp olive oil
- 2 chorizo sausages, thinly sliced
- 3 boneless chicken breasts
- 1/2 large fennel bulb, trimmed, cored and cut into julienne
- 1/2 yellow bell pepper, seeded and chopped
- 1/2 small red onion
- 1 garlic clove, minced
- salt and freshly ground pepper to taste
- 2 tomatoes, peeled, seeded and chopped
- 2 tbsp fresh parsley
- 1/2 tbsp sweet paprika
- 1 cup spanish short grain rice
- 8 large shrimp, shelled and deveined
- 8 mussels, cleaned

1.In a large bowl, combine the first five ingredients
- 2 1/2 cups all-purpose flour
- 1 1/4 cups sugar
- 3 teaspoons ground cinnamon
- 2 teaspoons baking soda
- 1/2 teaspoon salt
- 3 eggs
- 3/4 cup applesauce
- 1/2 cup vegetable oil
- 1 teaspoon vanilla extract
- 2 cups grated carrots
- 1 medium tart apple, peeled and grated
- 1 (8 ounce) can crushed pineapple, drained
- 1/2 cup flaked coconut
- 1/2 cup raisins
- 1/2 cup chopped walnuts
Brownie Biscotti

1.Preheat oven to 375 degrees F (190 degrees C)
- 1/3 cup butter, softened
- 2/3 cup white sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1 3/4 cups all-purpose flour
- 1/3 cup unsweetened cocoa powder
- 2 teaspoons baking powder
- 1/2 cup miniature semisweet chocolate chips
- 1/4 cup chopped walnuts
- 1 egg yolk, beaten
- 1 tablespoon water

- 1/4 cup arrowroot starch
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp pepper
- 2 lbs cubed beef stew meat
- 3 tbsp vegetable oil
- 4 cubes beef bouillon
- 3 1/2 cups water
- 1/2 cup red wine
- 1 tsp dried rosemary
- 1 tsp dried parsley
- 1/2 tsp pepper
- 4 large potatoes, cubed & peeled
- 5 carrots, cut into 1" pieces
- 5 stalks celery, cut into 1" pieces
- 1 large onion, chopped
- 2 tbsp cornstarch
- 2 tbsp cold water
- 1 tbsp ketchup
- 1 tbsp steak sauce
Teriyaki Meat Balls

1. Mix tamari, water, sugar, garlic power and ginger
- Meatballs:
- 1/4 cup tamari or soy sauce
- 1/4 cup water
- 3 tbsp sugar
- 2 cups bread crumbs
- 1/2 tsp garlic powder
- 1/2 tsp ginger
- 1/2 kg ground beef
- 3 tbsp vegetable oil
- Sweet & Sour Sauce:
- 1/2 cup waer
- 2 tbsp ketchup
- 1 tsp tamari or soy sauce
- 1/4 cup vinegar
- 1/2 cup white sugar
- 1 tbsp cornstarch
