Berry Quinoa Salad

1. Pour water and quinoa into pot and bring to boil
- Salad:
- 1 1/2 cups dry quinoa
- 3 cups water
- 1/2 cup chopped walnuts, toasted
- 1/2 cup dried cranberries
- 2 stalks celery, chopped
- 1/4 cup sunflower seeds
- 1/4 cup chopped green onions
- 1/4 cup chopped cilantro
- Dressing:
- 2 tbsp olive oil
- 2 tbsp flax or hemp oil
- 4 tbsp honey
- 1/4 cup orange juice
- 1/2 tsp cinnamon
- 1/2 tsp cumin
- 1/2 tsp nutmeg
Spicy Oatmeal Raisin Cookies

1.Preheat oven to 350 degrees F (175 degrees C)
- 1 cup butter, softened
- 1 cup packed light brown sugar
- 1/2 cup white sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 1/2 teaspoons ground cinnamon
- 1/2 teaspoon ground cloves
- 1/2 teaspoon salt
- 3 cups rolled oats
- 1 cup raisins (soaked in hot water to plump up)
Peanut Butter Cookies

1.Cream together butter, peanut butter and sugars
- 1 cup unsalted butter
- 1 cup crunchy peanut butter
- 1 cup white sugar
- 1 cup packed brown sugar
- 2 eggs
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 1/2 teaspoons baking soda
Sunny Citrus Chicken - Gluten Free

1. Place egg white and arrowroot starch in a separate shallow bowl
- 1 tbsp margarine
- 2 tbsp honey
- 1/2 tbsp lemon juice
- 1/2 tbsp cornstarch
- 1/4 cup chicken stock
- 2 tbsp orange juice
- 1/2 tsp curry
- 1/4 cup arrowroot starch
- 1 egg white
- 1 tbsp orange and/or lemon zest
- 2 chicken breasts

- 2 chicken breasts, cooked and shredded
- 1 tbsp lime juice
- 1 red onion, chopped
- 1 red pepper, sliced

- 1/2 cup sorghum flour
- 1/3 cup tapioca starch
- 1/3 cup potato starch

- 1 1/2 tsp xantham gum
- 2/3 cup packed brown sugar
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/4 cup cocoa
- 1 tbsp ginger
- 1 tsp cinnamon
- 1 cup unsweetened apple juice
- 3 tbsp olive oil
- 3 tbsp mayonnaise
- Topping:
- 1/2 cup crystallized ginger
- 1 cup pecan pieces
- 1/4 cup packed brown sugar

Preheat oven to 375°F. In a small bowl, mix together bread crumbs, cheese, and one tablespoon olive oil
- 1/4 cup bread crumbs
- 1/4 cup grated Parmesan cheese
- 1 1/2 tablespoons olive oil

- 1 small yellow onion, thinly sliced
- 1 medium stalk celery, sliced
- 3/4 pound turkey tenderloin, cubed into bite-size pieces

- Ground pepper, to taste
