Papa Anderson's Potato Salad

Mix ingredients
- Dressing:
- 3 pounds red potatoes
- 8-10 eggs (hard boiled)
- 1 onion chopped
- 2-3 stalks celery (chopped)
- Chives
- Mayonnaise
- Mustard (light)
- Half and half
- 2 tablespoons sweet pickle relish or pickle juice

In a small bowl, combine yogurt, mint, olive oil, honey and 1/2 tap salt
- 1/2 cup plain Greek yogurt
- 3 tbsp. Chopped fresh mint
- 2 tsp olive oil
- 2 tsp honey
- 1 tap salt, divided
- 4 medium Yukon gold or other yellow-flesh potatoes
- 2 tbsp. Butter, melted
- 1/4 tap black pepper

Strawberry Almond Green Salad

Mix ingredients
- Carmelized Almonds:
- 1 10-ounce package Romaine lettuce
- 3 green onions, sliced
- 1 pint fresh strawberries sliced
- 1/2 cup sliced almonds
- 2 tablespoons sugar
- 1/3 cup sugar
- 2 tablespoons poppy seeds
- 2 tablespoons cider vinegar
- 1/4 cup milk
- 3/4 cup mayonnaise
- 2 teaspoons almond extract
- 1/2 cup sliced almonds
- 3 Tbls sugar
- Heat and stir in heavy pan till light brown and carmelized. Cool and set aside
- Dressing - mix - refrigerate:
- 1/3 cup sugar
- 2 Tbsp poppy seed
- 2 Tbsp cider vinegar
- 1/4 cup milk
- 3/4 cup mayonnaise
- 2 tsp almond extract
- Toss all together, just before serving

- 2-1/4 cups all-purpose flour
