Chocolate Cake

This is such a great, simple, yet versatile, chocolate cake
- For the cake
- 10 tablespoons butter, softened, plus more for greasing
- 7 ounces all-purpose flour, plus more for dusting
- 4 1/2 ounces dark chocolate
- 3 tablespoons milk
- 5 ounces caster sugar (superfine)
- 3 eggs
- 1 tablespoon cocoa powder
- 1 teaspoon baking powder
- 1/4 teaspoon bicarbonate of soda (baking soda)
- Cocoa powder or icing sugar (confectioners'), for dusting, optional
- For the chocolate butter icing
- 6 tablespoons butter, softened
- 1 tablespoon cream
- 1 teaspoon vanilla extract
- 6 ounces icing sugar (confectioners')
- 1 tablespoon cocoa powder
Sausage & Stuffing Criss-Cross Pastry

Heat the oven to 375°F. Beat 1 egg and water in a small bowl with a fork or whisk
- 1/2 of a 17.3-ounce package Pepperidge Farm® Puff Pastry Sheets (1 sheet), thawed
- 2 eggs
- 1 tablespoon water
- 1/2 pound bulk pork sausage
- 1 cup Pepperidge Farm® Herb Seasoned Stuffing
- 1 small onion, chopped (about 1/4 cup)
- 1 cup chopped mushroom (about 3 ounces)
Fava Bean Soup

Bring a large pot of well-salted water to a boil over medium heat and set up a bowl of well-salted ice water
- Kosher salt
- 2 pounds shelled fava beans
- Extra-virgin olive oil
- 1/4 pound bacon, cut into lardons, optional (but I highly recommend it)
- 1 large onion, cut into 1/2-inch dice
- 2 ribs celery, cut onto 1/2-inch dice
- Pinch crushed red pepper flakes
- 3 cloves garlic, 2 smashed, 1 reserved whole
- 1 large Yukon gold potato, peeled and cut into 1/2-inch dice
- 4 to 5 cups vegetable or chicken stock
- 2 to 3 tablespoons grated Parmesan
- High quality extra-virgin olive oil
Nilaga Baboy (Boiled Pork w/ Vegetables)

Nilaga in filipino means 'boiled'
- 1 lb. pork (choices of belly, hocks, neck or any bony parts of pork), cut into serving pieces
- 5-6 cups water
- 3 cloves garlic, crushed
- 1 onion, quartered
- 2 green onions (scallions), sliced into 1” long
- 1/4 tsp. peppercorn
- salt to taste
- 2 eddoes- also known as taro or gabi, quartered (optional)
- 2 potatoes, quartered
- 1 can pork and beans
- pechay (bok choy) or cabbage leaves
Warm Black Bean & Chipotle Dip

Heat the oven to 425ºF. Grease a 1-1/2 qt
- 2 Tbs. extra-virgin olive oil; more for the baking dish
- 2 medium tomatoes, cored and cut into medium dice
- 2 tsp. kosher salt; more as needed
- 1 large yellow onion, finely diced
- 3 large cloves garlic, minced
- 1 Tbs. chili powder
- 2 15-1/2 oz. cans black beans, rinsed and drained well
- 2 canned chipotles en adobo, minced (about 1 Tbs.), plus 3 Tbs. adobo sauce
- 3 Tbs. cider vinegar
- 1-1/2 cups fresh or frozen corn kernels (if frozen, thaw first)
- 1-1/2 cups (6 oz.) grated sharp cheddar cheese
- 1-1/2 cups (6 oz.) grated Monterey Jack cheese
- 3/4 cup chopped fresh cilantro
- Freshly ground black pepper
- Tortilla chips for serving

Kare-kare is a traditional Filipino ox tail stew in a peanut-based sauce
- 1 kilo of beef (round or sirloin cut) cut into cubes, beef tripe or oxtail (cut 2 inch long) or a combination of all three (beef, tripe and oxtail)
- 3 cups of peanut butter
- 1/4 cup grounded toasted rice
- 1/2 cup cooked bagoong alamang (anchovies)
- 2 pieces onions, diced
- 2 heads of garlic, minced
- 4 tablespoons atsuete oil
- 4 pieces eggplant, sliced 1 inch thick
- 1 bundle Pechay (Bok choy) cut into 2 pieces
- 1 bundle of sitaw (string beans) cut to 2" long
- 1 banana bud, cut similar to eggplant slices, blanch in boiling water
- 1/2 cup oil
- 8 cups of water
