Corrie's Creamy Corn and Shrimp Chowder

Put the corn cobs into a large pot with just enough water to cover (break the cobs in half if they don't fit)
- 6 ears corn, kernels cut off the cobs, cobs reserved
- 2 Tbsp. (1/4 stick) butter
- 1 medium yellow onion, chopped
- 2 cups chicken broth
- 1/2 cup heavy cream
- Salt and pepper
- 1 pound large shrimp, peeled and deveined, and cut into 1-inch pieces
- 3 green onions (scallions), white and light green parts, trimmed and chopped

Adjust an oven rack to the middle position and heat the oven to 325 degrees
- 1/2 cup all-purpose flour
- 1/8 tsp. baking powder

Sweet Corn Chowder with Toasted Tortillas

Preheat the oven to 400 degrees F
- 6 cups frozen sweet corn, defrosted
- 3 scallions, each one trimmed and halved
- 1 clove garlic, peeled
- 1/4 cup semolina
- 6 cups hot vegetable stock made from concentrate or bouillon cubes
- 15 cups lightly salted tortilla chips
- 2 cups grated cheese
- 2 long red chiles, deseeded and finely chopped, optional

- 4 Tbsp. Kerrygold Irish butter
- 1/4 cup all-purpose flour
- 2 cups homemade chicken stock, canned low-sodium chicken broth, or 2 chicken bouillon cubes mixed with 2 cups boiling water
- 1/2 cup half-and-half
- 1/4 cup chopped onion
- 4 ounces white mushrooms, sliced
- 1 cup fresh or frozen peas
- 2 Tbsp. minced fresh flat-leaf parsley
- 1 cup cooked chicken, cut into 1/2-inch pieces
- 1 cup cooked ham, diced
- Salt and freshly ground pepper
- 1 sheet frozen puff pastry from a 17.3 ounce package, left at room temperature for 30 minutes

- 1 1/2 tsp. vegetable oil, preferably canola oil
- 2 large onions, chopped
- 1 stalk celery, chopped
- 1 red bell pepper, cored, seeded, and diced
- 3 cloves garlic, minced
- 1/2 tsp. ground cumin
- 3 1/2 cups reduced-sodium chicken stock
- 1 Tbsp. chopped fresh thyme or 1 1/2 tsp. dried thyme
- 1 bay leaf
- 2 cups corn kernels, fresh (2 large ears) or frozen
- 1 large potato, peeled and diced
- 2 Tbsp. cornstarch
- 1 12-oz. can evaporated skim milk
- Salt & freshly ground black pepper to taste
- Pinch cayenne pepper

- 1/3 cup chopped sweet red pepper
- 1/4 cup chopped celery
- 1 garlic clove, minced
- 1-1/2 tsp. olive oil
