Heat oil in a large saucepan over medium-high heat
- 1 Tbsp. olive oil
- 1 portabello mushroom, sliced
- 1 cup onion, finely chopped
- 1/4 cup fresh Italian parsley, chopped
- 1/4 tsp. salt
- 1 clove garlic, minced
- 1 cup chicken broth
- 1/4 cup sherry or chicken broth
- 1 lb. uncooked large shrimp, peeled and cleaned
- 8-oz. pkg. fettucine, cooked
- 1/2 cup grated Parmesan cheese
- 1 Tbsp. fresh chives, chopped

Beat shortening at medium speed of an electric mixer until light and fluffy; gradually add sugar, beating well
- 1/2 cup shortening
- 1/2 cup sugar
- 2 large eggs
- 1/2 cup molasses
- 1 1/2 cups all-purpose flour
- 1 tsp. baking soda
- 1 tsp. ground cinnamon
- 1 tsp. ground allspice
- 1 tsp. ground ginger
- 1 cup hot water
- Whipped cream
- Ground cinnamon (optional)
Gluten Free Whole Grain Teff Muffins

Carrie's Ingredient Notes: Flours: I used teff flour as my main whole grain in this recipe
- Dry Ingredients:
- 1 1/3 cups (228 gm) teff flour
- 2/3 cup (80 gm) arrowroot starch
- 1/4 cup (28 gm) ground flax seeds
- 1/2 tsp. salt
- 2 tsp. baking powder
- 1 tsp. baking soda
- 1/2 cup (102 gm) sugar
- Wet Ingredients:
- 4 eggs -OR- 1/2 cup (145 gm) warm water + 2 tbsp. EnerG egg replacer whisked together
- 1/2 cup (95 gm) oil
- 1 cup (240 gm) non-dairy milk (I used almond milk)
- Optional Add In's:
- 1/2 cup chopped nuts (55 gm) -- I used chopped walnuts
- 1/2 cup raisins (76 gm)
Candy Cane Snowballs

In a large mixing bowl, cream butter and confectioners' sugar
- 2 cups butter, softened
- 1 cup confectioners' sugar
- 1 tsp. vanilla extract
- 3-1/2 cups all-purpose flour
- 1 cup chopped pecans
- 8 ounces white candy coating
- 1/3 to 1/2 cup crushed peppermint candy
Peanut-Sesame Marbled Brownies

In a small saucepan melt the chocolate and ¼ cup of the butter over low heat until smooth
- 8 ounces semisweet chocolate
- 3/4 cup butter
- 1/4 cup creamy peanut butter
- 1/4 cup tahini (sesame butter)
- 3/4 cup packed brown sugar
- 1/2 cup granulated sugar
- 2 tsp. baking powder
- 3 eggs
- 2 Tbsp. milk
- 1 tsp. vanilla
- 2 cups all-purpose flour
- 1/2 coarsely chopped unsalted peanuts
- 2 Tbsp. sesame seeds
Bittersweet Chocolate Glaze

Melt the chocolate with the oil in a heavy saucepan over very low heat, stirring until smooth
- 3 ounces unsweetened chocolate, chopped
- 6 ounces semisweet chocolate, chopped
- 4 tsp. neutral vegetable oil (corn, safflower, canola or sunflower)
Potato and Mushroom Gratin

Heat the oven to 425 degrees F and butter a shallow baking dish or gratin
- 3 average-sized/ 1-1/2 lbs. baking potatoes, thinly sliced
- 1-1/2 cups milk
- 3 Tbsp. white wine
- Salt and pepper to taste
- 2 Tbsp. butter
- 2 tsp. garlic-infused oil
- 8 ounces cremini mushrooms, finely sliced to make 4 cups
Turkey Pesto Meatballs

Mix everything in a bowl and combine well
- 2 * 2 pounds Ground Turkey Breast Or Ground Chicken
- 1 * 1-½ cup Breadcrumbs
- * ½ teaspoons Salt
- * ¼ teaspoons Pepper
- * ½ cups Pesto Sauce
- 2 * 2 whole Egg Whites
- * ⅓ cups Parmesan Cheese
Banana French Toast

In a small, shallow bowl, mash banana coarsely with a fork
- 1 ripe banana, peeled
- 2 tsp. frozen orange juice concentrate
- 4 slices cinnamon bread
- 2 large egg whites
- 1/4 cup skim milk
- 1/4 cup nonfat or low-fat plain yogurt
- 1 1/2 Tbsp. maple syrup or honey
- 1 tsp. butter

- 1/3 1/3 1/3 cup white wine vinegar
