- 1-1/4 cups egg substitute
- 2 eggs
- 1/2 teaspoon dried oregano
- 1/8 teaspoon pepper

- 1 garlic clove, minced
- 1 teaspoon butter
- 3 plum tomatoes, chopped
- 1/2 cup crumbled feta cheese

Pasta Shards with Fresh Herbs

Bring 8 quarts of water to a boil in a large pot; add 2 Tbsp
- Coarse salt and freshly ground black pepper
- 1 package (12 ounces) lasagne noodles, broken unevenly into 2- to 4-inch pieces
- 1/2 cup coarsely chopped fresh flat-leaf parsley
- 2 Tbsp. finely chopped fresh chives
- 1/4 tsp. crushed red pepper flakes

This is a tasty main dish served in the bayou country of South Louisiana
- 1 cup chopped onion
- 1 cup chopped celery
- 1/2 cup each chopped green and yellow pepper
- 3 tablespoons olive oil
- 1 pound boneless skinless chicken breasts, cubed
- 2 teaspoons garlic powder
- 1 jar (16 ounces) salsa
- 1 tablespoon cornstarch
- 1 tablespoon water
- 1 tablespoon dried parsley flakes
- 1/2 teaspoon salt
- 1/4 teaspoon hot pepper sauce
- Hot cooked pasta
Mixed-Grain Cereal with Apricots & Almonds

Combine orange juice, water, cinnamon and salt in a medium saucepan
- 2 1/2 cups calcium-fortified orange juice
- 1 cup water
- 1/2 tsp. ground cinnamon
- 1/4 tsp. salt, or to taste
- 1 cup dried apricots or figs, diced
- 2/3 cups rolled oats
- 2/3 cup cornmeal
- 3/4 cup low-fat or nonfat plain yogurt
- 6 Tbsp. maple syrup
- 6 Tbsp. sliced almonds
Artichoke Chicken Recipe

Rosemary, mushrooms and artichokes combine to give chicken a wonderful, savory flavor
- 8 boneless skinless chicken breast halves (4 ounces each)
- 2 tablespoons butter
- 2 jars (6 ounces each) marinated quartered artichoke hearts, drained
- 1 jar (4-1/2 ounces) whole mushrooms, drained
- 1/2 cup chopped onion
- 1/3 cup all-purpose flour
- 1-1/2 teaspoons dried rosemary, crushed
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 2 cups chicken broth or 1 cup broth and 1 cup dry white wine
- Hot cooked noodles
- Minced fresh parsley

I found this recipe many years ago when my children were toddlers
- 3 tablespoons all-purpose flour
- 1/4 teaspoon pepper
- 4 boneless skinless chicken breast halves (1-1/2 pounds)
- 2 tablespoons vegetable oil
- 1 medium onion, chopped
- 1 tablespoon butter
- 1 cup chicken broth
- 3 tablespoons lemon juice
- 2 teaspoons dried basil
- 1/2 teaspoon dried thyme
- 4 lemon slices
- 2 tablespoons minced fresh parsley
- Hot cooked rice, optional
Warm Lentils with Spinach

Combine lentils, celery, shallots and garlic in a 4-quart saucepan, and cover with water by 2 inches
- 1 cup French green lentils (Puy lentils)
- 2 celery stalks, finely chopped
- 2 shallots, minced
- 2 garlic cloves, minced
- 2 Tbsp. extra virgin olive oil
- 3 cups loosely packed baby spinach leaves (about 4 ounces)
- Coarse salt and freshly ground pepper
Herbed Turkey Burgers

Heat 1 Tbsp. oil in a medium saute pan over medium
- 2 Tbsp. olive oil
- 2 shallots, minced
- 1 pound ground turkey, preferably 7% fat
- 1/4 cup loosely packed fresh mint leaves, finely chopped
- 1/4 cup loosely packed fresh flat-leaf parsley leaves, finely chopped
- 2 tsp. Dijon mustard, plus more for serving
- Coarse salt and freshly ground pepper
- 4 rustic rolls, for serving
- Boston lettuce, for serving
